Categories     30-Minute Meals

Time 20m

Number Of Ingredients 10

8 ounces angel hair pasta, cooked according to package directions
1/2 cup honey
1/4 cup lemon juice
2 tablespoons olive oil for sauce + 1 tablespoon for cooking chicken
1 tablespoon apple cider vinegar
1 tablespoon lemon pepper seasoning blend for sauce + more for sprinkling over chicken
1/2 teaspoon salt, or to taste
1/2 teaspoon black pepper, or to taste
leaves from 2 or 3 sprigs of thyme, optional and to taste
4 boneless skinless chicken breasts, diced into bite-sized pieces (about 1 1/2 pounds)

Steps:

  • Cook according to directions on box, drain, and set aside.
  • To a medium bowl or large measuring cup, add the honey, lemon juice, 2 tablespoons olive oil, apple cider vinegar, 1 tablespoon lemon pepper seasoning, salt, pepper, optional thyme, and stir to combine; set sauce aside.
  • To a large skillet, add 1 tablespoon olive oil, add chicken, generously sprinkle with lemon pepper seasoning, and cook chicken over medium-high heat for about 5 minutes, flipping intermittently so all sides cook evenly. Cooking time will vary based on thickness of chicken breasts and sizes of pieces. Chicken should be about 90% cooked through.
  • Turn heat to medium-low, and carefully add the sauce noting that it may bubble up in the first few seconds.
  • Allow sauce to bubble at a low boil for about 5 minutes, or until sauce has thickened and reduced some, and chicken is cooked through. Stir sauce and flip chicken intermittently throughout.
  • Add pasta to skillet with the chicken and toss to combine and coat. Serve immediately.
  • Chicken and pasta are best warm and fresh, but will keep airtight in the fridge for up to 3 days. Reheat gently prior to serving.

LIME CHICKEN PASTA

Lime Chicken Pasta image

I really loved my friend's lemon chicken pasta recipe. Unfortunately, the only ingredients I had from her recipe was chicken & pasta. So I substituted most of the ingredients. Surprisingly, it was simply great and everyone liked this one more than the original. I make this over the summer months and this is definitely our favorite pasta recipe. My sister-in-law likes it so much that every time she has a dinner party, she makes this. Everyone who tries it asks for the recipe.

Provided by Beanies mama

Categories     One Dish Meal

Time 25m

Yield 4 main, 4 serving(s)

Number Of Ingredients 10

1 lb chicken, chopped bite size (I prefer thigh, but breast is good, too)
1 lb pasta (penne or ziti works great)
2 -3 avocados
1/4 cup olive oil
1/4 cup green onion, chopped
1/4 cup fresh cilantro, packed and chopped
1/4 cup parmesan cheese, freshly grated (more for topping)
3 tablespoons lime juice
1 lime, zest of (optional)
salt & pepper

Steps:

  • Cook chicken your favorite way. I usually salt and pepper it and saute until no longer pink. Set aside.
  • Cook pasta as the package direction.
  • While pasta is cooking, dice avocados, and make pasta sauce by combining rest of the ingredients.
  • In a large bowl, toss chicken, pasta, sauce, salt & pepper. After the pasta is well mixed, add avocado and toss lightly so avocado doesn't get mashed up.
  • Top with more parmesan cheese.

Tips:

  • Choose the right chicken. Boneless, skinless chicken breasts or thighs are both good choices for this recipe. If you're using chicken breasts, you can slice them into thin strips or pound them thin with a meat mallet.
  • Marinate the chicken. The marinade helps to tenderize the chicken and infuse it with flavor. Be sure to marinate the chicken for at least 30 minutes, or up to overnight.
  • Cook the chicken over medium heat. This will help to prevent the chicken from drying out.
  • Don't overcook the chicken. Chicken is done cooking when it reaches an internal temperature of 165 degrees Fahrenheit.
  • Use a good quality pasta. A high-quality pasta will hold its shape better and have a better flavor than a cheaper pasta.
  • Cook the pasta according to the package directions. Be sure to drain the pasta well before adding it to the sauce.
  • Make the sauce while the pasta is cooking. This will help to save time.
  • Add the chicken and pasta to the sauce. Stir to combine.
  • Serve immediately. Garnish with lime wedges and cilantro, if desired.

Conclusion:

This solo honey lime chicken and pasta recipe is a quick and easy meal that is perfect for a busy weeknight. The chicken is tender and flavorful, and the pasta is cooked to perfection. The honey lime sauce is the perfect finishing touch, adding a bright and tangy flavor. This recipe is sure to become a favorite!
