Yield Makes 4 servings

Number Of Ingredients 5

1 tablespoon olive oil
4 pork rib chops, about 1 inch thick
Salt and freshly ground pepper
2 garlic cloves, lightly crushed
2 cups sliced mild pickled peppers, with 2 tablespoons of their juice (add a few hot peperoncini if you like)

Steps:

  • Heat the oil in a large skillet over medium-high heat. When the oil is very hot, pat the chops dry with paper towels. Sprinkle with salt and pepper. Cook the chops, turning once, for about 5 minutes on each side, or until browned.
  • Lower the heat to medium and scatter the garlic around the chops. Cover the pan. Cook for 5 to 8 minutes more, or until the chops are just slightly pink when cut near the bone. Do not overcook, or the chops will be dry. Transfer the chops to a plate and keep warm.
  • Add the peppers and the 2 tablespoons liquid to the skillet. Cook, stirring, for 1 to 2 minutes, or until the peppers are just heated through. Spoon the peppers over the chops and serve immediately.

Tips:

  • Tenderizing the Pork Chops: To ensure juicy and tender pork chops, it's recommended to use a meat mallet or a fork to tenderize them before cooking. This helps break down the fibers and allows the marinade to penetrate deeper, resulting in a more flavorful and succulent dish.
  • Marinating the Pork Chops: The key to flavorful pork chops lies in the marinade. The recipe suggests a simple yet effective marinade made with olive oil, garlic, oregano, thyme, rosemary, and red pepper flakes. Feel free to experiment with different herbs and spices to create your own unique marinade blend.
  • Cooking the Pork Chops: For a perfectly cooked pork chop, it's important to achieve a balance between a crispy exterior and a tender, juicy interior. The recipe recommends searing the pork chops in a pan until golden brown and then transferring them to the oven to finish cooking. This method ensures that the chops are cooked evenly throughout without drying out.
  • Making the Vinegar Peppers: The vinegar peppers are a delightful addition to this dish, adding a tangy and slightly spicy flavor. To make them, simply slice some bell peppers into thin strips and toss them in a mixture of vinegar, sugar, and salt. Let them marinate for at least 30 minutes before serving.
  • Serving Suggestions: These pork chops with vinegar peppers can be served with a variety of side dishes to create a complete meal. Some classic accompaniments include mashed potatoes, roasted vegetables, or a simple green salad. For an extra touch of flavor, drizzle the chops with the pan juices before serving.

Conclusion:

The Soprano's Pork Chops with Vinegar Peppers is a delicious and versatile dish that combines tender, flavorful pork chops with a tangy and slightly spicy vinegar pepper topping. With its simple yet effective marinade and cooking method, this recipe is a great choice for a weeknight dinner or a special occasion meal. Whether you're a fan of the iconic television show or simply a lover of good food, these pork chops are sure to impress.
