1 whole chicken (about 4 pounds), cut into pieces (including back)
8 cups water
Coarse salt
3 medium onions, thinly sliced (4 cups)
2 celery stalks, sliced crosswise 1/4 inch thick
4 garlic cloves, crushed
6 medium carrots, sliced 1/2 inch thick

Steps:

  • Bring chicken, water, and 1 tablespoon salt to a boil in a large stockpot. Skim foam. Add onions, celery, and garlic. Reduce heat. Simmer, partially covered, for 30 minutes.
  • Remove breast, and set aside. Add carrots. Simmer, partially covered, for 40 minutes.
  • Remove remaining chicken; discard back and wings. Let cool slightly. Remove meat from bones, and cut into bite-size pieces.
  • Stir in desired amount of chicken; reserve the rest for another use. Skim fat. Season with salt.

1 (10 1/4 ounce) can mushroom soup
1 (10 1/4 ounce) can onion soup
2/3 cup dry white wine
2 -3 lbs chicken pieces

Steps:

  • Preheat oven to 300°F.
  • Mix soups and wine.
  • Pour over chicken
  • Cover and bake for 2 1/2 hours
  • Thicken sauce with cornstarch and water if you want gravy
  • If you want stew, add some onions, carrots, frozen peas etc. 30 minutes before it is done.

4 large boneless skinless chicken breast halves (Chicken strips work great too)
poultry seasoning
4 slices American cheese
10 ounces cream of celery soup
1/2 cup sour cream
6 ounces chicken flavor stuffing mix
1/2 cup butter, melted

Steps:

  • Wash, dry chicken breasts with paper towels and place in an oval slow-cooker.
  • Sprinkle each breast with Poultry Seasoning to taste.
  • Place slice of Cheese over each breast.
  • Combine Celery Soup and Sour Cream; mix well and spoon over Chicken and Cheese.
  • Sprinkle Stuffing mix (bread cubes and seasoning packet) over top of cheese.
  • Drizzle melted butter over Stuffing mix.
  • Cover and cook on Low for 5 to 6 hours.
