3 tablespoons butter or 3 tablespoons bacon fat
1 small green cabbage, chopped
1/2 cup onion, chopped
1/2-3/4 lb smoked sausage, sliced (I like Conecuh, Original)
1 (15 ounce) can diced tomatoes, undrained (I like Hunt's Petite Diced)
1/4 teaspoon garlic salt, to taste
1/4 teaspoon Tony Chachere's Seasoning, to taste (optional)
salt, to taste
black pepper, to taste

Steps:

  • Chop/slice the sausage, cabbage, and onion.
  • In a large non-stick skillet, pre-cook the sliced sausage about 3 minutes to render some of the fat out. Remove sausage from skillet and drain on paper towels if needed. Set aside. Wipe the skillet clean.
  • In the same skillet, melt the butter. Add cabbage and onion and cook and stir on medium-high for about 5 minutes, until cabbage starts to wilt.
  • Add remaining ingredients, and the sausage.
  • Cover the skillet and cook for about 10 minutes.
  • Uncover, and finish cooking until cabbage is desired tenderness and most of liquid has been reduced.

2 tablespoons unsalted butter
1 tablespoon extra-virgin olive oil
12 ounces smoked sausage links, such as kielbasa or andouille
1 yellow onion, chopped (1 1/2 cups)
1 tablespoon packed light-brown sugar
2 teaspoons Creole seasoning, such as Tony Chachere's
1 head green cabbage (3 pounds), cored and cut into 1/2-inch pieces (12 cups)
3 tablespoons apple-cider vinegar
Kosher salt and freshly ground pepper
Whole-grain mustard, for serving (optional)

Steps:

  • Melt 1 tablespoon butter and oil in a large pot or 1 1/2-quart braiser over medium heat. Add sausages and cook, flipping once, until golden brown, about 6 minutes. Transfer to a plate.

4 strips bacon, cut into 1-inch pieces, or more to taste
1 medium head cabbage - cored, cut into eighths, and sliced
2 cups water
½ teaspoon cayenne pepper
salt to taste
1 packet sugar substitute (such as Equal®)

Steps:

  • Heat a large, lidded cast iron pot over medium-high heat. Add bacon and fry until browned but not crispy, about 5 minutes. Quickly add cabbage pieces and water, in that order. Cover the pot with the lid and allow cabbage to steam, about 1 minute. Season with cayenne pepper and salt and boil for 15 minutes.

1/2 cabbage chopped
1/2 white onion chopped
5 slice bacon

1 pinch sugar
1/2 tsp cider vinegar or balsalmic (i used cucumber balsamic)

  • 1. Saute onion and bacon Cut bacon into small pieces set aside

6 slice bacon

2 jalapeno peppers-chopped

Steps:

  • 1. Fry your (6)bacon slices; while bacon frys, core your cabbage and chop onions and cabbage. Remove bacon from pan and sit aside on paper towel to drain.
  • 2. add chopped onions to bacon drippings in skillet and saute'. Add your chopped cabbage and stir up well coating with onions and bacon drippings. Place lid on cabbage and reduce heat to simmer.
  • 3. chop (2)jalapenos (you may use more or less and you have the option of seeding before chopping). Add your jalapenos to cabbage mixture in skillet, crumble your bacon that was set aside earlier and add to skillet then salt and pepper to taste (I use a lot of pepper at this point-everything is covered)stir together and recover with lid.
  • 4. Your cabbage does not need any water added to skillet and it will cook down so don't be alarmed if your skillet looks super full. You only need to cook this until tender...you don't want to cook all the nutrients out. Don't forget to stir this well, you don't want any cabbage or onion pieces getting burned left on bottom.
  • 5. Best served hot, but left overs the next day are delicious as well...just a bit warmer as they have sat together overnight! Enjoy, this is a wonderful side dish to just about any meal, but my favorite is meatloaf and brisket!

4 slice uncooked bacon, cut into 1/2 inch pieces
1 small onion, chopped
1 small head of cabbage, cored and chopped into bite sized pieces - may use half of a large cabbage for lack of a smaller head of cabbage
salt and pepper to taste
1/2 c water (to help steam the cabbage)

Steps:

  • 1. In a skillet, fry the bacon pieces and chopped onion together until the bacon is cooked and the onion is starting to brown. Do not drain bacon drippings.
  • 2. Add the cabbage and stir fry for several minutes, until the cabbage is coated with the drippings. Add 1/2 Cup of water and cover for a few minutes at medium heat. Uncover and stir frequently, replacing the cover each time. Reduce heat to med-low, cover and let cook about 20 to 30 more minutes, stirring occasionally until the cabbage is tender.
  • 3. Season with salt and pepper to your taste. Serve hot.

2 Tbsp bacon grease or real butter, not margarine
1/2 head cabbage, cored & cut into about 1" square pieces, no smaller
1/2 large onion, cut into slivers
smidgen (about 1/4 tsp.) sugar
salt & pepper to taste

Steps:

  • 1. Place all ingredients in 10 3/4" cast iron skillet in the order given. Do not mix up at this time.
  • 2. Start out on high heat for a minute or two, until cabbage starts to "give it up",then reduce heat to low & cover skillet.
  • 3. Give it about 5 minutes before you start to stir it in skillet. Then, for the next 10 min, about, stir occasionally so it won't burn. Leave lid on to cook. Don't over stir it or it will just mush & not brown.
  • 4. Cook until it is starting to get translucent & tender-crisp & brown somewhat, as in picture above.
  • 5. Serve with anything. We had it with hamburger steaks & sauted onions today.
