SLOW COOKER SOUTHERN LIMA BEANS AND HAM

Slow Cooker Southern Lima Beans and Ham image

I searched your website for the simple lima bean recipe that my mom used to make and the one that is served by many restaurants here in the south as a side dish. I couldn't find one, so I submitted my own. This is an easy, basic lima bean dish with ham, onion, and seasonings. Served over Mexican cornbread, it makes a delicious hearty meal. You can also do this on the stovetop. Just follow the directions on the back of the lima bean bag and add the seasonings. Slow cooker time is about 7 hours. Add a side salad for a complete meal.

GREEN BEANS AND COUNTRY HAM, SOUTHERN-STYLE RECIPE - (4/5)

Green Beans and Country Ham, Southern-Style Recipe - (4/5) image

Provided by Becky Jo

Number Of Ingredients 7

2 * 2 pounds green beans, cleaned and snapped
* About 1/4-pound thinly sliced country ham (see notes below)
2 * 2 medium potatoes, cut in large cubes (see notes below)
1 * 1 large onion, coarsely chopped
* Water
* Salt and pepper to taste
4 * 4 tablespoons unsalted butter

Steps:

  • Place the ham slices in a large sauté pan. Add about 3 cups of water. Bring to a boil, then reduce heat, cover and simmer until ham is tender. Remove ham from pot and cut into small pieces. Return to the pot and add the beans, potatoes and onions. Season with pepper. Add a bit more water if needed, but not too much. Bring back to a boil, then reduce heat, cover and simmer until beans are very tender, about 1 hour. (Cooking time will depend on the age of the beans.) Taste the beans and add salt if needed but, since country ham is very salty, additional salt will probably not be necessary. If there appears to be too much broth, cook on high without the cover until some of the moisture evaporates. Add butter to beans and stir until melted; replace lid and cook an additional 10 minutes. This will keep, covered, over low heat until serving. Notes: If you want a meatier main dish, add some smoked ham pieces when you add the beans. For most people, more country ham would make it too salty. Instead of large potatoes, you can use about one pound baby or creamer potatoes, halved if large. I like yukon gold, but any boiling potato is fine.

Time 3h10m

Yield 8

Number Of Ingredients 8

1 pound dry pinto beans
8 cups water
1 large, meaty ham hock
1 large onion, chopped
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon salt, or to taste
¼ teaspoon ground black pepper, or to taste

Steps:

  • Place the beans and water in a large stockpot. Add the ham hock, onion and garlic. Season with chili powder, salt and pepper. Bring to a boil, and cook for 2 minutes. Cover, and remove from heat. Let stand for one hour.
  • Return the pot to the heat, and bring to a boil once again. Reduce heat to medium-low, and simmer for at least 3 hours to blend flavors. The longer you simmer, the thicker the broth will become. I like to cook mine for about 6 hours.
  • Remove the ham hock from the broth, and let cool. Remove the meat from the bone, and return the meat to the stockpot, discarding the bone. Adjust seasonings to taste.

SOUTHERN HAM AND BEANS

my mom cooks these beans and ham they are delish

Provided by Patsy Fowler

Time 4h20m

Number Of Ingredients 6

1 lb mixed dried beans pintos and great northerns
1 Tbsp salt add more if needed
1 tsp pepper
1/2 tsp garlic powder
1 Tbsp bacon drippings
2 c chopped country ham pieces or you can use ham stock

Steps:

  • 1. Place the beans one handful at a time in a colander in the sink. Pick through them as you put the in the colander and pick out any little rocks or shriveled beans.
  • 2. Run water over the beans to wash them off really well. Place the beans in a deep pan.
  • 3. Cover with water about 2 inches above the beans. Bring to a boil. Boil for about 2 minutes. Watch carefully so they don't boil over.
  • 4. Carefully pour the water off of the beans and then cover with fresh water to about 2 inches above the beans.
  • 5. Bring to a boil again and then turn down to a low simmer. Add the salt, pepper, garlic powder and bacon drippings at this point.
  • 6. I like to let the beans cook for about 2 hours and add in the ham and cook them for at least another 2 hours.
  • 7. Add water at this point if beans have soaked up to much water. This is not a quick dish but it is fairly carefree once you get it on. Just be sure to check your beans every hour and add more water if needed.
  • 8. When the beans are done taste for seasoning and add accordingly.

Tips:

  • Soak the beans overnight: This will help to reduce the cooking time and make the beans more tender.
  • Use a variety of beans: Don't be afraid to mix and match different types of beans, such as pinto beans, black beans, and kidney beans.
  • Add flavorings: Experiment with different flavorings, such as garlic, onion, celery, and spices, to create a unique and flavorful dish.
  • Cook the beans until they are tender: The beans should be cooked until they are soft and creamy, but not mushy.
  • Serve with cornbread: Cornbread is the perfect accompaniment to ham and beans. It's a delicious and hearty way to soak up all of the flavorful sauce.

Conclusion:

Ham and beans is a classic Southern dish that is easy to make and packed with flavor. With a few simple ingredients and a little bit of time, you can create a delicious meal that the whole family will enjoy. So next time you're looking for a hearty and comforting meal, give ham and beans a try!
