When we were in Gettysburg PA last summer, we had the most wonderful spoon bread at the Farnsworth House Restaurant. I haven't tried this recipe yet, but I'm hoping it's just as good! This comes from Lean and Luscious and Meatless.

Time 1h

Yield 8 serving(s)

Number Of Ingredients 6

2 cups cornmeal
2 cups water, boiling
1 teaspoon salt
3 tablespoons butter, melted
1 1/2 cups milk
3 eggs, room temperature

Steps:

  • Preheat oven to 350F and butter an 8" baking dish.
  • Sift corn meal and mix with boiling water, stirring until smooth and free from lumps.
  • Add salt, butter and milk.
  • Separate eggs; beat whites until light, yolks until light.
  • Add eggs to batter.
  • Pour batter in prepared dish and bake 45 minutes.
  • This dish should be served in the same dish as it is baked inches.

Tips:

  • Use Fresh Cornmeal: Fresh cornmeal adds a more robust flavor and texture to your spoon bread. If you can't find fresh cornmeal, you can use regular cornmeal, but be sure to toast it in a skillet over medium heat for a few minutes before using it. This will help bring out the flavor and aroma of the cornmeal.
  • Use Good Quality Buttermilk: Buttermilk is a key ingredient in spoon bread, so be sure to use good quality buttermilk. Fresh buttermilk is best, but you can also use store-bought buttermilk. If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk and letting it sit for 5 minutes.
  • Don't Overmix the Batter: Overmixing the batter will result in a tough, dense spoon bread. Mix the ingredients just until they are combined.
  • Bake the Spoon Bread in a Hot Oven: Preheat your oven to the desired temperature before baking the spoon bread. This will help the spoon bread rise and cook evenly.
  • Serve the Spoon Bread Warm: Spoon bread is best served warm. You can reheat it in the oven or microwave, but be careful not to overcook it.

Conclusion:

Spoon bread is a delicious and versatile side dish that can be served with a variety of meals. It's easy to make and can be tailored to your own taste.
