Feel free to use plain ketchup to top this delicious simple meatloaf recipe,or serve with ketchup on the side. I usually use 85% ground beef because of the flavor,but 90% will work as well.

2 lb ground beef
2 large eggs,lightly beaten
1/2 c milk
1 c bread crumbs, dry
1/2 c finely chopped onion
1 1/4 tsp salt
1/4 tsp ground black pepper
1/2 c ketchup(plus more for topping,if desired)
GLAZE TOPPING
4 Tbsp ketchup
4 Tbsp maple syrup
2 Tbsp dijon mustard
1 tsp worcestershire sauce

Steps:

  • 1. Preheat oven to 350.
  • 2. In a large bowl,combine the ground beef,eggs,milk,bread crumbs,onion,salt & pepper,and 1/2 cup ketchup. Mix until well blended and pack into a 9x5x3 inch loaf pan. Mix glaze topping and set aside. Bake the meatloaf for 1 hr and 10 min. Carefully drain off any excess grease and top with the glaze topping. Bake for 10 to 15 minutes longer. Remove from oven and let rest 5 minutes before serving.

3 pounds lean ground beef
1 cup ketchup
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1 tablespoon soy sauce
1 teaspoon Worcestershire sauce
3 slices white bread, dampened with water and torn into 1/2-inch pieces
3 large eggs
1/2 teaspoon Tabasco Sauce
1 medium onion, coarsely grated
1 pound bacon

Steps:

  • Put oven rack in middle position and preheat oven to 350°F.
  • In large mixing bowl, using hands, gently knead together all ingredients except bacon until just combined. Transfer mixture to a 13 X 9-inch glass baking dish and mound into a 12 X 6-inch oval loaf. Spread bacon strips over loaf and bake until meat is firm and bacon is well done, about 1 hour.

2 lb lean ground beef
1/2 large onion, finely chopped
1/4 c celery ribs, finely chopped
1/2 c bread crumbs, seasoned
2 large eggs
1 slice day old bread, tore in small pieces
2 tsp creole seasoning
1/4 c whole milk
1 - 8 oz can of tomato sauce
1/3 c ketchup
2 Tbsp worcestershire sauce, divided
1 Tbsp ketchup
1 slice bacon ~ (optional)

Steps:

  • 1. Melt butter in a medium nonstick skillet over medium heat; add celery and onion, and sauté 7 minutes or just until tender. Let cool.
  • 2. Meanwhile, in a large bowl stir together ground beef, 2 eggs~lightly beaten,1/2 can of tomato sauce. 1 tablespoon Worcestershire sauce, breadcrumbs, celery mixture,and next ingredients. Shape into a 10- x 5-inch loaf, cut bacon in half, and put on top of loaf. Bake at 350°for 45 minutes.
  • 3. Stir together remaining 1 tablespoon Worcestershire sauce, tomato sauce, and 1 tablespoon ketchup until blended, pour evenly over meatloaf, and bake 15 to 20 more minutes, or until no longer pink in center. Let stand 10 minutes before serving.
