½ cup buttermilk
½ cup water
salt and pepper, to taste

½ cup all-purpose flour
1 teaspoon seafood seasoning, such as Old Bay™
1 quart vegetable oil for deep frying

Tips:

  • Choose the right catfish fillets. Look for fillets that are thick and firm, with a light pink color. Avoid fillets that are thin or have a lot of dark spots.
  • Use a good quality cornmeal. Stone-ground cornmeal will give your catfish a crispy, flavorful coating. You can also use a mix of cornmeal and flour, if you prefer.
  • Season the catfish fillets liberally. Use a combination of salt, pepper, and other spices, such as paprika, garlic powder, and onion powder.
  • Coat the catfish fillets evenly in the cornmeal mixture. Make sure the fillets are completely coated, but don't press the cornmeal mixture into the fillets too hard.
  • Fry the catfish fillets in hot oil. The oil should be hot enough to sizzle when the catfish fillets are added. Fry the fillets for 3-4 minutes per side, or until they are golden brown and crispy.
  • Drain the catfish fillets on paper towels. This will help to remove any excess oil.
  • Serve the catfish fillets hot, with your favorite sides. Some popular sides for catfish include hush puppies, coleslaw, and French fries.

Conclusion:

Southern-style oven-fried catfish is a delicious and easy-to-make dish that is perfect for any occasion. With its crispy cornmeal coating and flavorful seasoning, this dish is sure to be a hit with your family and friends. So next time you're looking for a quick and easy meal, give this recipe a try.
