SOUTHERN SUGARED PEANUTS (PAULA DEEN)
A tasty little treat from Lady & Sons cookbook. Note: On the Food Network site, this recipe is called "Dianne's Sugared Peanuts" and does not include the salt. The baking directions are also a bit different: "Bake until the peanuts are golden, about 12 to 15 minutes, stirring at 5 minute intervals."

PAULA DEEN'S PEANUT BUTTER PIE
This is a super easy but terrific peanut butter pie. I topped mine with peanut butter cups instead of peanuts. Recipe courtesy of The Lady & Sons Too, Paula H. Deen. Chill time isn't listed or even required, but I put mine in the fridge until serving.

Steps:
- Grease an 8" square baking dish with butter, oil or cooking spray. Line with waxed paper, leaving the edges of the waxed paper to hang over the edges of the dish.
- In a medium, heavy bottomed saucepan, melt the chocolate chips with the milk over medium low heat. Stir in the butter until completely melted. Stir in the peanuts, vanilla and salt. Using a rubber spatula spread the mixture on the bottom of the prepared pan, smoothing the top. Cover loosely with plastic wrap and refrigerate until firm, at least 4 hours. Using a hot, dry knife, cut into 1" squares.
Tips for Making Southern Sugared Peanuts:
- Use fresh, raw peanuts. This will ensure that your peanuts are crispy and flavorful.
- Soak the peanuts overnight. This will help to soften them and make them more absorbent to the sugar syrup.
- Use a candy thermometer to monitor the temperature of the sugar syrup. This will help to ensure that the syrup reaches the proper temperature for crystallization.
- Stir the peanuts constantly while they are cooking in the sugar syrup. This will help to prevent them from sticking together and burning.
- Spread the peanuts out on a baking sheet to cool. This will help to prevent them from clumping together.
Conclusion:
Southern sugared peanuts are a delicious and easy-to-make snack or party food. With a few simple ingredients and a little patience, you can create this classic Southern treat that is sure to be a hit with everyone who tries it. So next time you are looking for a sweet and crunchy snack, give Southern sugared peanuts a try!
