Time 1h5m

Yield 4 serving(s)

Number Of Ingredients 8

1 lb ground beef
1 large onion, chopped
1 medium green pepper, chopped
1 (14 1/2 ounce) can beef broth
1 (8 ounce) can tomato sauce
3/4 cup uncooked rice
1 tablespoon chili powder
1/2 teaspoon garlic powder

Steps:

  • In skillet, cook beef, onions and peppers until beef is browned and vegetables are tender. Drain.
  • Stir in broth, tomato sauce, rice, chili powder and garlic powder. Heat to boiling. Cover; cook over low heat for 20 minutes or until rice is tender and liquid is absorbed; stir occasionally.
  • Serve with cheese and sour cream, if desired.

Tips:

  • Choose the right cut of beef: For this recipe, flank steak, skirt steak, or sirloin steak are all good options. These cuts are relatively thin and cook quickly, making them ideal for a stir-fry.
  • Slice the beef against the grain: This will help to tenderize the meat and make it more flavorful.
  • Use a hot skillet: A hot skillet will help to sear the beef and prevent it from sticking.
  • Don't overcrowd the skillet: If you add too much beef to the skillet at once, it will not cook evenly. Cook the beef in batches if necessary.
  • Season the beef well: Use a flavorful blend of spices to season the beef. This will help to enhance the flavor of the dish.
  • Cook the beef to your desired doneness: Depending on your preference, you can cook the beef to rare, medium-rare, medium, or well-done.
  • Add the vegetables and cook until tender: Once the beef is cooked, add the vegetables to the skillet and cook until they are tender. This will usually take about 5-7 minutes.
  • Stir in the rice and cook until heated through: Once the vegetables are tender, stir in the cooked rice and cook until it is heated through. This will usually take about 2-3 minutes.
  • Serve immediately: This dish is best served immediately after it is cooked.

Conclusion:

Southwest beef and rice skillet is a quick, easy, and flavorful one-pot meal that is perfect for a busy weeknight dinner. The beef is tender and flavorful, the vegetables are perfectly cooked, and the rice is fluffy and delicious. This dish is sure to be a hit with your family and friends.
