1 (1 ounce) package ranch dressing mix
1 cup mayonnaise
1 cup sour cream
1 (8 ounce) package cornbread, prepared
2 (15 ounce) cans whole kernel corn, drained
2 (15 ounce) cans red kidney beans, rinsed and drained

1 green bell pepper, chopped
1 small red onion, chopped
4 green onions, sliced
8 ounces cheddar cheese, shredded
6 slices bacon, cooked and crumbled

  • Using 1/2 of cornbread, break into smaller chunks and place in glass serving dish. Begin layering 1/2 of the ingredients (except cheese, bacon & dressing)in order and repeat, beginning again with remaining cornbread. Spread top layer with dressing and top with cheese and bacon crumbles. Garnish with green onion tops or small sweet jalapenos, halved & seeded. Refrigerate until serving time.

Tips:

  • Use fresh ingredients: Fresh vegetables, herbs, and chicken will make a big difference in the flavor of your salad.
  • Don't overcook the chicken: Overcooked chicken is tough and dry. Cook it just until it is cooked through, about 8-10 minutes per side.
  • Make your own cornbread: Homemade cornbread is delicious and easy to make. You can find a recipe online or in a cookbook.
  • Use a variety of vegetables: This salad is a great way to get your daily dose of vegetables. Use a variety of colors and textures for a more interesting dish.
  • Dress the salad just before serving: Dressing the salad too early will make the cornbread soggy. Dress it just before serving so that the cornbread stays crispy.

Conclusion:

Southwest chicken and cornbread salad is a delicious and easy-to-make salad that is perfect for a summer meal. It is packed with flavor and nutrients, and it is sure to be a hit with your family and friends. So next time you are looking for a healthy and satisfying salad, give this recipe a try!
