2 large onions, chopped
2 green bell peppers, cored, seeded and chopped
2 tablespoons minced (3 large cloves) garlic
3 tablespoons vegetable oil
1/4 cup chili powder, or to taste
1 tablespoon ground cumin
1 tablespoon dried oregano
2 tablespoons tomato paste (recommend getting tube)
3 pounds boneless beef chuck, ground coarse
1 (28-ounce) can whole tomatoes, including liquid
1 to 1 1/2 cups beef broth
4 tablespoons cider vinegar
1-ounce unsweetened chocolate, chopped
1 (19-ounce) can kidney beans, rinsed and drained
Rice, as an accompaniment
Toppings: Tortilla chips; sour cream; grated cheddar; chopped red onions; chopped jalapenos; diced avocado; minced cilantro; etc.

Steps:

  • In a casserole cook the onions, peppers and garlic in the oil over moderate heat, stirring occasionally, for 5 minutes. Add the chili powder, cumin and oregano and cook, stirring, for 3 minutes. Add the tomato paste and cook, stirring, for 2 minutes more. Add the beef and cook, stirring occasionally, until no longer pink. Add the tomatoes, 1 cup of the broth, the vinegar and chocolate and bring the mixture to a boil, crushing the tomatoes with the back of a spoon. Simmer the chili, covered, for 1 hour, adding additional broth, if necessary. Add the kidney beans and simmer, uncovered, for 15 minutes more. Ladle into bowls and serve with rice and desired toppings.

1 large green bell pepper, chopped
1 onion, chopped
2 tablespoons minced garlic
2 pounds sirloin roast, cut into 1/2-inch cubes

2 (8 ounce) cans tomato sauce
3 cups water
2 tablespoons mild chili powder

Steps:

  • Heat the oil in a large pot over medium heat. Cook and stir the green bell peppers, onion, and garlic in the hot oil until soft, 5 to 7 minutes. Add the sirloin roast to the pepper mixture and continue cooking until the beef is completely browned, 25 to 30 minutes.
  • Stir the chili beans, diced tomatoes, tomato sauce, water, chili powder, cumin, nutmeg, salt, black pepper, lime juice, and Worcestershire sauce into the pot; reduce heat to medium-low and cook 3 to 5 hours. Remove from heat and allow to cool slightly before chilling in refrigerator overnight.

  • Spray a large sauce pan and heat over medium high heat.
  • Add the carrots, onion, garlic and salt and cook, stirring, for 3 minutes.
  • Add the beef and cook, breaking it up with a spoon, until it is no longer pink, 3 to 5 minutes.
  • Add the tomato paste and cook, stirring, until it is slightly darkened, 1 minute.
  • Add the beans, green chiles, chili powder, beef broth, and 1/2 teaspoon salt.

2 teaspoons olive oil
1 medium onion, sliced thin
6 -8 hatch green chili peppers, roasted, peeled, seeded and chopped
1 cup grated muenster cheese, or

3 eggs
2 tablespoons flour

Steps:

  • Preheat oven to 350 degrees, warm the olive oil in a medium size skillet; when hot add in the sliced onions and cook stirring frequently until wilted and they begin to color.
  • Add in the chili and cook for 2 to 3 minutes, stir in ham and warm through.
  • Place the eggs through cottage cheese in a blender container and blend until smooth.
  • Place the onion mixture into the bottom of the pie crust, top with grated cheese and pour blender mixture over all.

2/3 cup honey
2 tablespoons brown sugar
3 tablespoons unsalted butter
1/2 cup diced white onion
2 teaspoons chopped garlic
One 12-ounce bottle of your favorite beer
1/2 cup cooked bacon, coarsely chopped
1/8 cup apple cider vinegar
2 cups ketchup
1/4 cup molasses
1/3 cup granulated sugar
3 tablespoons brisket drippings
2 tablespoons chili powder
1 tablespoon Worcestershire
Kosher salt and pepper
1/4 cup kosher salt
1/4 cup coarse black pepper
1/8 cup Korean chile powder
1/8 cup granulated garlic
Canola oil, for rubbing the ribs and smoker grates
2 racks pork spareribs
1 cup apple cider vinegar, in a spray bottle
Garnish: sliced green onions
4 to 6 cups half-and-half
1 tablespoon chopped garlic
1 tablespoon chipotle hot sauce
1 teaspoon ground roasted cumin
1 teaspoon seafood seasoning
1 teaspoon fresh thyme leaves
1/2 cup shredded American cheese
1 pound medium pasta shells, cooked to al dente
1 cup diced cooked green chiles
1 cup shredded jack cheese
1 1/2 cups shredded sharp Cheddar
1 cup shredded smoked Gouda
Kosher salt and pepper
2/3 cup toasted buttered breadcrumbs
1 teaspoon Korean chile powder

Steps:

  • For the honey bourbon glaze: Pour the bourbon into a saucepan over low heat; ignite bourbon to burn off the alcohol for about 5 minutes. Add the honey and brown sugar and whisk to thicken. Simmer for another 3 minutes, then remove from heat. Pour glaze into a small bowl and set aside.
  • For the beer bacon bbq sauce: Heat a large pot on high heat, then add the butter and let it melt for 1 to 2 minutes. Reduce heat to medium. Add the onions and garlic. Saute until translucent. Add the beer and bacon and cook for 8 to 10 minutes. Add the apple cider vinegar and reduce by a quarter, then add ketchup, molasses, granulated sugar, brisket drippings, chili powder, Worcestershire, salt and pepper and cook on low heat for 30 to 45 minutes, stirring occasionally. Let cool for 10 minutes, then puree in a blender until smooth, and season with salt and pepper to taste.
  • For the ribs: Whisk together the salt, pepper, chile powder and garlic powder in a small bowl. Drizzle a little canola oil over the ribs, front and back, then rub the oil in. Holding your hand high, season both sides of the ribs with rub. Be sure to get an even coating on both sides, along with the sides of the ribs.
  • Soak 5 to 6 paper towels with canola oil, then open the smoker lid and place soaked paper towels in the smoker with 1 chunk hickory, 2 small chunks apple wood and a few handfuls charcoal. Light the paper towels. Let the coals burn down for 20 to 30 minutes. Add a couple more chunks hickory, apple and charcoal, then let smoker come up to 250 degrees F. Place a small pan of water on smoker rack, then place ribs in smoker. Let cook 30 to 40 minutes.
  • Add another chunk of each wood and more charcoal; repeat this process every 30 to 45 minutes. At 2 hours into the cooking process, spritz ribs with apple cider vinegar, then spritz every 30 minutes until the third hour of cooking. At the third hour, wrap the ribs in foil and place back on the smoker. At the 4 1/2-hour mark, take the ribs out of foil and glaze with the honey bourbon. Let glaze set in for 20 to 30 minutes in the smoker meat-side up. Let ribs rest for 10 to 15 minutes, then slice. Drizzle ribs with Beer Bacon BBQ sauce and toss. Garnish the ribs with sliced scallions.
  • For the Southwestern Green Chili Mac 'n' Cheese: Meanwhile, heat four cups half-and-half to a gentle boil in a medium-large saucepot. Add the garlic, chipotle sauce, cumin, seafood seasoning and thyme, then add the American cheese, whisking until smooth and melted. Fold in the pasta and green chiles and heat through until lightly bubbly. Add the shredded jack, Cheddar and Gouda. If the pasta is too thick, add in another cup or two of half-and-half to smooth it out. Season to taste with salt and fresh ground pepper. Garnish with toasted buttered breadcrumbs and a sprinkle of Korean chile flakes.
  • If you prefer baked mac 'n' cheese, place pasta into a casserole dish, sprinkle a handful of extra Cheddar and jack cheeses on top and bake at 350 degrees F until browned and bubbly, about 30 minutes.

1 can black beans - (14 1/2 oz) drained
1 can yellow corn - (14 1/2 oz) drained
3/4 cup diced red bell pepper diced
1/2 cup diced yellow onion diced
1/3 cup fresh lemon juice
Crushed black pepper to taste
AVOCADO RANCH DRESSING:
1 cup prepared guacamole
1 1/2 cups bottled ranch dressing
PICO DE GALLO:
1 medium sweet onion chopped
3 medium tomatoes chopped
2 jalapeño peppers - (to 4)
3 tablespoons chopped fresh cilantro or to taste
2 tablespoons fresh lemon juice
Salt to taste
Freshly-ground black pepper to taste
COBB SALAD:
5 prepared seasoned chicken patties (3 oz ea)
1 package green salad mix - (16 oz) (iceberg/romaine mix)
3 medium Roma tomatoes diced
1 package bacon - (12 oz) fried crisp, diced (set aside to drain)
3 hard boiled eggs - (or 4) diced
8 ounces Monterey jack and cheddar cheese mix finely grated
1 cup Pico De Gallo (listed above)
Chopped green onions for the garnish

Steps:

  • Corn And Black Bean Relish: Mix black beans, corn, red bell pepper, diced yellow onion, and lemon juice with crushed black pepper in bowl and refrigerate for several hours. This will let the flavors develop. Avocado Ranch Dressing: Mix together well and place in a covered plastic container and refrigerate, unused portion will stay fresh for several days. Pico De Gallo: Remove seeds, stem, and finely chop jalapeño pepper. Mix all ingredients together and refrigerate. Should be used same day. Cobb Salad: Boil eggs and drain. Let them cool. Set aside. Fry bacon until crisp and dice. Set aside. Fry seasoned chicken patties until crisp, drain and set aside. Cut chicken patties into strips, 3/4-inch wide by 2 1/2 inches long, before using. On a large serving platter, place lettuce. Top, in strip fashion, with the remainder of the ingredients. Cover the length of the lettuce in the order given. Left to Right: Lettuce, on whole platter; 1/4 to 1/3 cup shredded Colby/Jack cheese; 1/3 cup pico de gallo; chicken patties strips, diced; 1/2 cup corn and black bean relish mixture; 1 boiled egg, chopped; 1/4 cup crisp bacon, diced; green onions, to taste for the garnish; avocado ranch dressing, along the side of the salad. Olive Oil (for cooking burgers)
1 pound ground turkey
2 egg whites
1/4 bead crumbs
2 tbsp minced garlic (if using jarred galic, use about 1/2 tbsp juice as well)
1 serrano pepper, minced
1/4 c red onion, finely chopped
1/8 c green onion, finely chopped
1/2 8 oz can black beans
1/2 8 oz can corn
juice of 1/2 lime
1 tbsp Worcestershire sauce
Chili Lime Mayonnaise
1/2 cup mayonnaisse
juice of 1 lime
2 tsp red chili powder
1 tsp garlic (minced)
AND/OR
1/2 tsp garlic juice
1 tsp paprika

Steps:

  • Combine all ingredients (except olive oil) in a bowl. Mix with hands for best results and pat out into patties. Heat oil in frying pan. Add burger patties to pan. Cook for approximately 5-7 minutes per side on medium-high to high heat until meat is completely cooked. Burgers will probably blacken a bit on the outside. For the chili lime mayonnaise, combine all the ingredients in a bowl. Chill for at least 30 minutes, if desired. Burgers can be eaten on a bun or by themselves, dipped in mayonnaise.

1 can (15 oz.) low-sodium kidney beans, drained
1 can (8 oz.) Del Monte® Tomato Sauce-No Salt Added
1 Tbsp. chili powder
(Optional) limes
(Optional) light sour cream
(Optional) cilantro

Steps:

  • 1. Heat a large skillet coated with cooking spray over medium-high heat. Cook turkey and onion for 5 minutes or until onion is soft, stirring frequently.
  • 2. Stir in tomatoes and its juices, corn, beans, tomato sauce and chili powder. Bring to a boil, reduce heat, cover and simmer 12-15 minutes or until slightly thickened.
  • 3. Serve with lime wedges and top with sour cream and cilantro, if desired. Salt and pepper to taste.

I had this chili on my recent trip to Arizona and it is out of this world delicious. Chef Burke Perry at the Westin Kierland Resort and Spa in Scottsdale, Arizona, was kind enough to share the recipe with me. This makes a lot but I'm sure you can freeze it or feel free to reduce the amounts.

1 (96 ounce) can black beans or 3 cups uncooked dried black beans
3 lbs raw ground beef
1 lb beef jerky, shredded
2 large yellow onions, diced
1/2 cup fresh garlic, chopped
8 small green bell peppers, diced
2 chipotle peppers, from can chopped (note very spicy)
2 cups chili sauce, in can
2 cups tomato paste
2 quarts beef stock or 2 quarts chicken stock
1 tablespoon mild chili powder
1 tablespoon cumin
1/2 tablespoon ground black pepper
kosher salt, to taste (because you get saltiness from the beef jerky)
1 cup fresh cilantro, chopped
2 cups smoked mozzarella cheese or 2 cups monterey jack cheese, shredded

Steps:

  • Brown ground beef in large skillet or dutch oven.
  • Drain off fat from ground beef.
  • Return beef to same pan and add diced onions.
  • Saute for 2 minutes on medium heat.
  • Add garlic, jerky and green bell peppers.
  • Carmelize vegetables.
  • Add tomato paste and deglaze with beef or chicken stock.
  • Add chili sauce and then remaining ingredients except for the cilantro.
  • Simmer on medium low heat for one hour or until all seasonings are fully incorporated into the chili.
  • Season chili to taste at the end and take off the heat and add the fresh chopped cilantro.
  • You want to try to keep the cilantro as green as possible.
  • Serve the chili with shredded smoked mozzarella cheese or Monterey Jack.
  • Note: Use very little salt in chili since you will get most of your needed salt from the jerky.
  • Also, keep in mind that chipotle peppers are very spicy and you need just a little bit.
  • Another suggestions: The chili could be served with fried tortilla chips or warm flour tortillas or flat bread would be nice as well.

1 boneless pork shoulder butt roast (2 to 3 pounds)
1 tablespoon canola oil
1/2 cup chopped onion
1 garlic clove, minced
1 quart chicken broth
2 cans (4 ounces each) chopped green chilies
2 tablespoons chili powder
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon pepper
2 cans (15-1/2 ounces each) hominy, drained
Warm flour tortillas, optional

  • Trim pork and cut into 1/2-in. cubes. In a 3-qt. saucepan over medium heat, brown pork in oil; drain. Add onion; cook for 2 minutes or until onions are crisp-tender. Add garlic; cook 1 minute longer. Stir in the broth, chilies, chili powder, oregano, salt and pepper; bring to a boil. Reduce heat; cover and simmer for 1 hour. , Add hominy; simmer 30 minutes longer or until pork is tender. Serve with tortillas if desired.

1 pound penne rigate (ridged penne)
1 1/2 pounds ground beef
1 tablespoon ground cumin (1 palmful)
1 tablespoon roasted ground coriander (1 palmful)
2 tablespoons chili powder (2 palmfuls)
Coarse black pepper
1 large yellow onion, chopped
3-5 garlic cloves, chopped (we really like garlic so I put in more, the recipe calls for 3)
1 jalepeño
2 tablespoons butter
2 tablespoons all-purpose flour (2 palmfuls)
2 cups milk
3/4 pound cheddar cheese (about 2 1/2 cups)
1/4 cup fresh cilantro leaves (a generous handful), chopped
1/2 cup fresh flat-leaf parsley leaves (a few handfuls) chopped
1 14-ounce can diced fire-roasted tomatoes

Steps:

  • Preheat the broiler to high and position the rack 8 inches from the heat. Bring a large pot of water to a boil. Salt the boiling water and cook the pasta until slightly undercooked--a little chewy at the center. While the water is coming to a boil, preheat a large skillet over medium-high heat and brown the hamburger. When the hamburger is almost finished, but still a little pink, throw in the garlic, jalepeño, and onions and finish cooking until the burger is browned and the onion is translucent. Drain the grease from the skillet and mix in the cumin, coriander and chili powder. Take off the heat or turn heat down low. In a medium sauce pot (and you can do this while you're browning the hamburger), melt the butter and add the flour to it. Cook for 1 to 2 minutes over moderate heat and then whisk in the milk. When the milk comes to a bubble, stir in the cheese, cilantro and parsley with a wooden spoon. When the cheese has melted, stir in the tomatoes. Once the pasta is cooked, drain it and add it back into the large pot. Add the contents of the hamburger and all of the Cheddar sauce, and stir to combine. Transfer to a baking dish, sprinkle with a bit more cheese if you wish, and place under the broiler to lightly brown.

1 chicken breast fillet
1 tablespoon vegetable oil
2 tablespoons minced red bell pepper
2 tablespoons minced green onion
1/3 cup frozen corn
1/4 cup canned black beans, rinsed and drained
2 tablespoons frozen spinach, thawed and drained
2 tablespoons diced, canned jalapeno peppers
1/2 tablespoon minced fresh parsley
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/4 teaspoon salt
dash cayenne pepper
3/4 cup shredded Monterey Jack cheese
five 7-inch flour tortillas
Avocado-ranch dipping sauce:
1/4 cup smashed, fresh avocado (about half of an avocado)
1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon buttermilk
1 1/2 teaspoons white vinegar
1/8 teaspoon salt
1/8 teaspoon dried parsley
1/8 teaspoon onion powder
dash dried dill weed
dash garlic powder
dash pepper
Garnish
2 tablespoons chopped tomato
1 tablespoon chopped onion

Steps:

  • Preheat barbecue grill to high heat. Rub the chicken breast with some vegetable oil then grill it on the barbecue for 4 to 5 minutes per side or until done. Lightly salt and pepper each side of the chicken while it cooks. Set chicken aside until it cools down enough to handle. Preheat 1 tablespoon of vegetable oil in a medium-size skillet over medium-high heat. Add the red pepper and onion to the pan and sauté for a couple minutes until tender. Dice the cooked chicken into small cubes and add it to the pan. Add the corn, black beans, spinach, jalapeno peppers, parsley, cumin, chili powder, salt, and cayenne pepper to the pan. Cook for another 4 minutes. Stir well so that the spinach separates and is incorporated into the mixture. Remove the pan from the heat and add the cheese. Stir until the cheese is melted. Wrap the tortillas in a moist cloth and microwave on high temperature for 1 1/2 minutes or until hot. Spoon approximately one-fifth of the mixture into the center of a tortilla. Fold in the ends and then roll the tortilla over the mixture. Roll the tortilla very tight, then pierce with a toothpick to hold together. Repeat with the remaining ingredients until you have five eggrolls. Arrange the eggrolls on a plate, cover the plate with plastic wrap and freeze for at least 4 hours. Overnight is best. While the eggrolls freeze prepare the avocado-ranch dipping sauce by combining all of the ingredients in a small bowl. Preheat 4-6 cups of oil to 375 degrees.. Deep fry the eggrolls in the hot oil for 12-15 minutes and remove to paper towels or a rack to drain for about 2 minutes. Slice each eggroll diagonally lengthwise and arrange on a plate around a small bowl of the dipping sauce. Garnish the dipping sauce with the chopped tomato and onion.

Well there isn't much of a story besides I love chili and love to experiment with new recipes and making things up on my own, and this is what I came up with. My child loved it and I hope you love it as much as we did!

4 can(s) crushed tomatoes, large cans
2 lb ground beef
1/2 lb ground italian spicy sausage
1 c red, yellow, and green peppers, chopped/cubed
1/2 c yellow onion chopped/cubed
1 can(s) yellow corn, drained
1 can(s) black beans, drained
1 can(s) chili or kidney beans, drained
6 Tbsp chili powder, or more or less (to taste)
1 Tbsp garlic powder
2 Tbsp olive oil, light
1 tsp ground black pepper
1 tsp salt
1 pkg multi-grain tortilla chips
2 Tbsp crushed red pepper flakes (spicy! and optional)

Steps:

  • 1. First, you're going to need a large pot or a stock pot, and a frying pan for this recipe.
  • 2. Brown the sausage and the beef in the frying pan, either together or separately, making sure it isn't clumping up by chopping it finely with spatula. I also have used a fork and knife to cut it up while cooking to make it finer. Don't overcook meat, just brown it so there is no pink color. It's still going to cook more in the chili.
  • 3. Add 4 cans of tomatoes to the large pot, and add meat and all other ingredients. BE SURE to DRAIN the BEANS and CORN or it will be too watery. Cook for 3 hours (no good chili is cooked quickly - it has to simmer on a low heat for AT LEAST 3 hours if not more.) This way all of the ingredients get a chance to mesh together and create the delicious taste.
  • 4. The red pepper flakes are listed as optional - this is a very spicy chili if you use the red pepper flakes - but my child still ate it so it must be pretty good. I like spicy so it didn't bother me. I do recommend the flakes but you may want to scale down on them if you have a "finicky" eater. Enjoy!
  • 5. The multi-grain tortilla chips are to eat with the chili. My child likes to scoop it up with the chips. It's also a nice way to balance out the spicy flavor, the chips soften it up a bit. And, they are healthy!
