SOUTHWEST BREAKFAST BURRITOS

Southwest Breakfast Burritos image

My wife and I love eating Mexican so I came up with this recipe so that we could have a little more variety in our morning meals. We are busy people and don't have time to make elaborate meals in the morning. In the past we have bought frozen breakfast burritos, but they are not very tasty and I knew they could be improved upon. This recipe will make a large batch of the burrito fixins that you can freeze, or store in the refrigerator so that you can make great breakfast burritos whenever you please.

Time 1h5m

Yield 20

Number Of Ingredients 13

12 eggs
⅔ cup milk
½ teaspoon salt
2 tablespoons butter
1 pound bulk pork sausage
2 tablespoons minced garlic
½ red onion, diced
1 tomato, diced
¼ cup chopped fresh cilantro
1 (3.5 ounce) can diced jalapenos
1 (1 ounce) package taco seasoning
1 ½ cups shredded Cheddar cheese
20 (6 inch) flour tortillas

Steps:

  • Whisk together the eggs, milk, and salt in a large bowl. Heat butter in a large skillet over medium-high heat. Pour in the egg mixture; cook and stir until eggs are completely set, about 5 minutes. Chop the cooked eggs and place in a large bowl. Set aside.
  • Heat a large skillet over medium heat and stir in the sausage and garlic. Cook and stir for 5 minutes, then add the onion. Continue cooking and stirring until the sausage is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Combine the sausage with the eggs, tomato, cilantro, jalapeno, and taco seasoning. Allow mixture to cool to room temperature, then stir in the Cheddar cheese.
  • Place a tortilla onto your work surface, then spoon some of the filling halfway between the bottom edge and the center of the tortilla. Flatten the filling into rectangle shape with the back of a spoon. Fold the bottom of the tortilla snugly over the filling, then fold in the left and right edges. Roll the burrito up to the top edge, forming a tight cylinder. Repeat with the remaining ingredients.
  • Tightly wrap individual burritos with plastic wrap and freeze until ready to serve. Heat in the microwave until hot, 3 to 4 minutes, before serving.

Yield 4 serving(s)

Number Of Ingredients 17

1 cup quinoa (remove saponins if your quinoa did not come clean of this)
2 cups vegetable broth
1 cup cooked red kidney beans (or canned, drained & rinsed)
1/2 cup water
1/2 teaspoon minced garlic (I used dried)
1/2 cup nutritional yeast
sea salt & freshly ground black pepper, to taste
1/2 cup water
6 tortillas (depends how full you want them)
avocado, chopped (for garnish)
1/2 cup salsa
1/8-1/4 cup water
1 tablespoon non-dairy mayonnaise
1 teaspoon cumin
1 teaspoon pure maple syrup
1/2 teaspoon lime juice
1/4 teaspoon chili powder

Steps:

  • Add dry, unwashed quinoa to a large dry skillet. Toast until fragrant, stirring occasionally. Add veggie broth and bring to a boil. Cover, lower heat, and simmer until tender (about 15 minutes).
  • Add beans, water, garlic, nutritional yeast, salt & pepper. Cover, and heat over low flame until beans are warmed through. Add more water if needed to keep the quinoa from sticking.
  • In an oven or toaster oven, lightly toast 2 tortillas until warm and slightly crispy.
  • Make the sauce: Add all sauce ingredients to a blender and process until sauce is smooth.
  • Plate. Divide quinoa/bean mixture in half, and place half the filling inside each tortilla. Roll up or fold tortillas in half. Drizzle with southwestern sauce and chopped avocados.

Tips:

  • Utilize a quality quinoa: Select a fresh and fluffy quinoa for the best texture and flavor.
  • Rinse the quinoa: Rinsing quinoa eliminates any bitter-tasting coating, resulting in a cleaner flavor.
  • Cook the quinoa perfectly: Follow the package instructions or use a 2:1 water-to-quinoa ratio for fluffy and separate grains.
  • Roast the vegetables: Roasting intensifies their natural flavors and adds a slightly smoky touch.
  • Season the filling: Don't skimp on the spices! A flavorful blend of chili powder, cumin, and paprika is essential.
  • Use fresh herbs: Fresh cilantro and lime juice bring vibrancy and brightness to the dish.
  • Wrap the burritos tightly: Tightly wrapped burritos ensure they stay intact when eating.
  • Serve with desired toppings: Guacamole, salsa, sour cream, and shredded cheese are classic burrito accompaniments.
