10 oz can of Black Beans (I use low sodium)
1/2 lb frozen corn (or can of corn)
Fresh Cilantro (chopped)
Salsa or Fresh cut tomatoes
Plain fat free plain Yogurt (or low fat sour cream)
Sliced Avocado or Guacamole (optional)
Chopped Scallions (optional)
Shredded cheese (optional)
Pepper to taste

Steps:

  • Cook chicken, if necessary, and shred into pieces.

1/2 pound ground beef, cooked and drained
1-1/4 cups sour cream
1 cup shredded Monterey Jack cheese, divided
1 cup shredded cheddar cheese, divided
1 can (4 ounces) chopped green chilies
1/2 teaspoon salt
1/4 teaspoon pepper
Sliced ripe olives, chopped tomatoes and green onions, optional

Steps:

  • In a large bowl, combine the rice, beef, sour cream, 3/4 cup of Monterey Jack cheese, 3/4 cup of cheddar cheese, chilies, salt and pepper. , Spoon into a greased 1-1/2-qt. baking dish. 1 medium green pepper, diced
1 medium onion, chopped
2 garlic cloves, minced
1 cup uncooked long grain rice
1/2 teaspoon ground cumin

1 can (14-1/2 ounces) reduced-sodium chicken broth
2 cups frozen corn (about 10 ounces), thawed
1 can (15 ounces) black beans, rinsed and drained
