SOUTHWESTERN QUINOA VEGETABLE CASSEROLE

Provided by Serenus

Categories     One Dish Meal

Time 1h

Yield 6 cups, 4 serving(s)

Number Of Ingredients 13

1 (14 ounce) can Rotel Tomatoes
1 (15 ounce) can whole black beans, drained
1/4 cup sliced jalapeno
1 cup frozen corn
1/2 cup vegetable broth
3/4 cup quinoa
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup grated cheddar cheese
sour cream (optional)

Steps:

  • Preheat oven to 400.
  • combine all ingredients except cheese and sour cream in a 2 quart casserole.
  • cover with foil and bake for 30 minutes.
  • remove and stir.
  • bake for another 20 minutes or until all liquid has been absorbed and quinoa is tender.
  • cover with cheese and broil till cheese is melted (usually around 1 or 2 minutes).
  • serve with sour cream.

Tips:

  • Prep your veggies: Before you start cooking, wash and chop all of your vegetables. This will save you time and energy while you're cooking.
  • Use a variety of vegetables: The more variety of vegetables you use, the more flavorful your bake will be. Try to include a mix of colors and textures, such as broccoli, carrots, zucchini, and bell peppers.
  • Don't overcook your vegetables: Overcooked vegetables are mushy and bland. Cook them just until they are tender-crisp, about 10-15 minutes.
  • Use a flavorful sauce: The sauce is what really brings the bake together. Choose a sauce that is flavorful and complements the vegetables you're using. A simple tomato sauce, a creamy cheese sauce, or a tangy yogurt sauce are all good options.
  • Top it with cheese: Cheese is always a good idea. Sprinkle some shredded cheese over the top of the bake before you put it in the oven. This will give it a golden brown crust and a gooey, delicious center.
  • Serve it with a side: A southwestern vegetable bake is a great main course, but it can also be served as a side dish. Pair it with grilled chicken, fish, or shrimp, or serve it over rice or quinoa.

Conclusion:

A southwestern vegetable bake is a delicious and easy way to get your daily dose of vegetables. It's a great meal for busy weeknights, and it's also perfect for potlucks and parties. With so many different variations, there's a southwestern vegetable bake recipe out there for everyone. So next time you're looking for a healthy and flavorful meal, give one of these recipes a try.
