HONEY AND SOY SAUCE MARINADE

Honey and Soy Sauce Marinade image

This is a lovely marinade for barbecued or fried chicken. I usually use it for chicken breasts cut into not too thin stripes which I cook on a table barbecue. Most raclette gadgets in Switzerland also include a barbecue facility. In the winter I like to invite people for a raclette and table barbecue evening and the marinated chicken stripes are always part of it. Everybody loves them! I found this marinade in a chicken cooking book and there they recommend it in particular for chicken thighs meat (bones removed). I'm sure it will be nice with whatever part of chicken you fancy. Just remember that the bigger the parts you want to fry/barbecue, the longer the meat should be in the marinade. You may even want to marinate your meat overnigt.

Yield Serves 4

Number Of Ingredients 4

1/2 cup soy sauce
2 tablespoons grated fresh ginger
3 tablespoons mirin
1 pound small squid (bodies and tentacles), cleaned

Steps:

  • Mix together the soy sauce, ginger, and mirin in a large bowl to make the marinade. Reserve 1/2 cup of the marinade and set aside. Lay the squid in the remaining liquid, gently turning 4 times to coat all over. Marinate the squid for 10 minutes at room temperature, turning once.
  • Preheat a grill to hot. Grill the squid for about 4 minutes (5 minutes if they're larger than 1 ounce apiece). Every 30 seconds flip the squid and brush on the reserved marinade. The squid will turn from translucent to white when they're ready, becoming tender and releasing a rich aroma. Be careful not to overcook; squid turns rubbery if grilled too long. Serve immediately.

SEAFOOD SOY SAUCE MARINADE

Time 5m

Yield 1 recipe

Number Of Ingredients 8

2 eggs
1 green onion
1 teaspoon minced ginger
1 teaspoon soy sauce
1 teaspoon sherry wine
1 teaspoon sugar
1 teaspoon cornstarch
salt and pepper

Steps:

  • Combine all ingredients and whisk well.

Tips:

  • Choose the right soy sauce. Not all soy sauces are created equal. For marinating, use a light or regular soy sauce, rather than a dark soy sauce, which is thicker and sweeter.
  • Add other ingredients to your marinade. In addition to soy sauce, you can add other ingredients to your marinade to enhance the flavor of your meat or vegetables. Common additions include garlic, ginger, honey, sesame oil, and rice vinegar.
  • Marinate for at least 30 minutes, but no longer than 24 hours. The longer you marinate your meat or vegetables, the more flavorful they will be. However, don't marinate for longer than 24 hours, or the meat or vegetables may become tough.
  • Use a resealable plastic bag or container to marinate your food. This will help to keep the marinade in contact with the food and prevent it from drying out.
  • Turn your food occasionally while it is marinating. This will help to ensure that the marinade is evenly distributed.
  • Discard the marinade after use. Do not reuse the marinade, as it may contain harmful bacteria.
  • Cook your marinated food as directed. Once your food has been marinated, cook it according to the recipe or your preferred method.

Conclusion:

Soy sauce marinade is a versatile and easy way to add flavor to your meals. It can be used on a variety of meats, vegetables, and seafood. With a few simple ingredients and a little time, you can create a delicious and flavorful dish that your family and friends will love.
