1 pound lean ground beef (90% lean)
1/2 cup finely chopped onion
1/4 cup chopped green pepper
1 cup undrained canned diced tomatoes
1 can (6 ounces) tomato paste
1 teaspoon dried oregano
3/4 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1/4 teaspoon sugar
2 large egg whites, lightly beaten
1 tablespoon butter, melted
1/4 cup grated Parmesan cheese
1 cup (8 ounces) 2% cottage cheese
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 350°. Cook spaghetti according to package directions for al dente; drain., In a large skillet, cook beef, onion and green pepper over medium heat 5-7 minutes or until beef is no longer pink, breaking up beef into crumbles; drain. Stir in tomatoes, tomato paste, seasonings and sugar., In a large bowl, whisk egg whites, melted butter and Parmesan cheese until blended. Add spaghetti and toss to coat. Press spaghetti mixture onto bottom and up sides of a greased 9-in. deep-dish pie plate, forming a crust. Spread cottage cheese onto bottom; top with beef mixture. , Bake, uncovered, 20 minutes. 1 lb cooked cooled spaghetti
6 eggs, beaten
1 cup pecorino romano cheese, grated
extra virgin olive oil
salt & freshly ground black pepper

Steps:

  • In a large bowl beat eggs. Add the grated cheese and stir to break up clumps.
  • Add salt if you use it and the freshly ground black pepper (the coarser the pepper, the better).
  • Add the spaghetti and mix until it is coated with the egg/cheese mixture.
  • Heat your frying pan (I prefer a black iron pan).
  • When very hot add your extra virgin olive oil.
  • Coat the pan generously and pour in the pasta mixture.
  • While it is cooking push the edges in toward the center of the pan. This will compact the "pie" and keep it intact later.
  • When the bottom side of pie is GOLDEN BROWN place a plate on top of the frying pan and flip the pie into the plate.
  • Then slide the pie back into pan golden side up. When the bottom side has cooked carefully transfer the pie to a plate to cool. Enjoy this Sicilian pasta omelette. Makes approximately 8 servings.

2 tablespoons butter
⅓ cup grated Parmesan cheese
2 eggs, beaten
1 pound lean ground beef
½ cup chopped onion
¼ cup chopped green bell pepper
1 clove garlic, minced
1 (14.5 ounce) can diced tomatoes
1 (6 ounce) can tomato paste
1 teaspoon white sugar
1 teaspoon dried oregano
1 cup cottage cheese
½ cup shredded mozzarella cheese

Steps:

  • Cook and drain spaghetti. Stir in margarine, parmesan cheese and eggs, while spaghetti is hot. Form spaghetti mixture into a crust in a buttered 10 inch pie plate.

Nonstick cooking spray, for greasing the pan
Kosher salt and freshly ground black pepper
1 pound spaghetti
1 pound ground beef (85 percent lean)
1 tablespoon olive oil
1 medium yellow onion, chopped
2 cups marinara sauce, homemade or store-bought (I like Rao's)
1/2 cup whole-milk ricotta cheese
2 tablespoons minced fresh flat-leaf parsley
3 large eggs
1/2 cup plus 2 tablespoons grated Parmesan
1 cup shredded mozzarella

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-3-inch cake pan with cooking spray.
  • Bring a large pot of salted water to a boil. Add the spaghetti and cook for 3 to 4 minutes less than the package recommends, so that it is very al dente. Drain and reserve.
  • In a large skillet over medium-high heat, brown the beef, 5 to 8 minutes; season with salt and pepper. Transfer the beef to a paper towel-lined plate to drain. Wipe the skillet clean with a paper towel. Heat the olive oil in the skillet over medium heat and saute the onions until translucent, 4 to 5 minutes. Set aside.
  • In a large bowl, whisk together the marinara, ricotta, parsley, eggs, 1/2 cup of the Parmesan, 1 teaspoon salt and 1/4 teaspoon pepper. 4 oz spaghetti, or angel hair, broken in half 2 times
2 cloves garlic, minched
2 tablespoons butter
1 cup grated parmesan cheese
1 large egg, beaten
2 tablespoons bread crumbs
2 tablespoons oil, vegetable or canola
1 small onion, diced
8 oz ground beef, 90% lean
15 oz tomato sauce, 1 can
3 tablespoons tomato paste
1 teaspoon sugar
1 tablespoon fresh basil, minced
1 cup ricotta cheese
1 large egg
1 teaspoon dried oregano
1 ½ cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350˚F (180˚C).
  • Wrap pasta in a clean dish towel and fold twice, breaking pasta into smaller 1-3 inch (2½ - 7½ cm) pieces.
