1/4 pound bacon, diced
1/2 cup chopped onion
1/4 cup dry white wine
1 pound tomatoes, peeled and chopped, or canned whole Marzano tomatoes, crushed by hand (see note below to peel tomatoes)
1/2 teaspoon freshly ground black pepper
Pinch crushed red pepper (I added that, not in original recipe)
1 pound spaghetti
1 cup freshly grated Pecorino romano or Parmigiano-Reggiano

Steps:

  • In a large sauce pan, cook the bacon and onion until lightly browned. Add the wine and cook until almost evaporated. Add the tomatoes, black pepper and pinch of crushed red pepper. Stir to combine and simmer on low for 20 minutes, stirring occasionally as the tomatoes release their juices. Taste for salt and pepper.
  • Meanwhile, cook spaghetti in salted boiling water until al dente. Reserve ½ cup cooking water, drain pasta and add to the saucepan with half the grated cheese and toss to combine well. Add reserved pasta cooking water if it seems too thick. Sprinkle with remaining cheese and serve.

1/2 pound bacon strips, chopped
1 medium onion, chopped
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
Minced fresh parsley, optional

Steps:

  • Preheat oven to 350°. Cook spaghetti according to package directions for al dente., In a large skillet, cook bacon and onion over medium heat until bacon is crisp, stirring occasionally; drain. Stir in tomatoes and tomato sauce; bring to a boil., Drain spaghetti; transfer to a greased 11x7-in. baking dish. Spread sauce over top. Bake, covered, 40-45 minutes or until bubbly. 1 lb bacon
1 large onion
4 (8 ounce) cans tomato sauce (save cans)
1 tablespoon garlic powder (more or less to taste)
2 teaspoons onion powder (more or less to taste)
2 teaspoons oregano (more or less to taste)
2 teaspoons sweet basil (more or less to taste)
1 (2 lb) package spaghetti noodles

Steps:

  • Cut bacon and onion into small pieces.
  • Cook in pot or large pan till lightly browned and the onions are tender.
  • Drain grease.
  • Add tomato sauce.
  • *Fill 2 of the 4 cans with water and stir.
  • transfer water between cans and pour into meat and tomato mixture* Add spices.
  • Stir well and let simmer for about 30 to 40 minutes.
  • Cook spagetti according to package directions.
  • Mix the meat and sauce with the noodles.
  • Serve with dinner rolls/brown and serve rolls.

1 (16 ounce) package spaghetti
¼ cup olive oil
8 slices bacon, cut into 1/4 inch pieces
4 cloves garlic, minced
½ cup chopped fresh flat-leaf parsley

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink.

1 tablespoon extra-virgin olive oil
6 slices thick-cut bacon, chopped
1/3 cup grated parmesan cheese

6 large eggs

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Drain, reserving 1 cup of the cooking water.
  • Meanwhile, heat the olive oil in a separate large pot over medium-high heat. Add the bacon and cook until crisp, 7 to 9 minutes.
  • Add the pasta, 1/2 cup reserved cooking water and the parmesan to the pot with the bacon. Cook, stirring and adding more cooking water as needed, until coated; season with salt and pepper.

About 2 tablespoons EVOO
4 ounces smoky bacon, chopped
1 pound ground sirloin
3 to 4 cloves garlic, chopped
2 fresh bay leaves
1 Fresno chile pepper, finely chopped
1 onion, finely chopped
Pinch ground cloves
Salt and freshly ground pepper
1/2 cup dry red wine
1 cup beef stock
1 tablespoon tomato paste
One 14-ounce can Italian crushed tomatoes
1 pound spaghetti
Grated pecorino, for serving
Chopped fresh flat-leaf parsley, for garnish

Steps:

  • Heat a drizzle of EVOO in a pot over medium-high heat. Add the bacon and cook until browned. Transfer the bacon to a plate and pour the fat from the pot. Add 2 turns of the pan of EVOO. Pat the beef dry, then add it to the pot and cook until browned, crumbling the meat with a wooden spoon. Add the garlic, bay leaves, chile pepper, onions, cloves, a little salt and lots of pepper. Cook, stirring frequently, for 10 minutes. Add the wine and deglaze the pan, scraping up the browned bits from the bottom. Add the beef stock and tomato paste, then stir in the crushed tomatoes and bacon. Simmer until thickened.
  • Bring a large pot of water to a boil for the pasta and season with salt. Add the pasta and cook until al dente. Reserve 1 cup of the cooking liquid, then drain the pasta. Add the cooking liquid and the pasta to the sauce and toss to combine.
  • Serve the pasta topped with cheese and parsley.
  • Cook's Note: If you are not serving the sauce immediately, cool and store in the refrigerator. Reheat over medium heat.

120g smoked streaky bacon, sliced into matchsticks

The one-two-three punch of spicy red-pepper flakes, aromatic garlic slivers and savory herbes de Provence bloomed in fat provides the umami-rich base for this easy workday meal. Red vermouth creates a rich, jammy pasta sauce edged with sweetness. Don't sleep on angel hair pasta: It's got the right airy bounciness that's excellent at soaking up seasonings. Threaded with parsley and Parmesan, these generously oiled noodles are a dream to eat.

8 ounces bacon
2 medium red onions
1/4 cup extra-virgin olive oil
Kosher salt and black pepper
8 garlic cloves
1 teaspoon red-pepper flakes

1 cup sweet red vermouth (vermouth rouge)
1 pound angel hair or capellini
1 cup finely chopped fresh parsley
1/2 cup finely grated Parmesan or Pecorino Romano

Steps:

  • Take the bacon out of its packaging with the slices still stuck together and place on a cutting board. Cut the bacon, still stacked, crosswise into ½-inch slices to create little bacon pieces, also known as lardons. Add to a large rimmed sheet pan. Halve and thinly slice the onions. Add to the sheet pan as well. Drizzle the olive oil over the bacon and onions, season with salt and pepper, and toss until evenly coated.
  • Place the sheet pan in a cold oven and then heat the oven to 450 degrees. Roast until the bacon has rendered much of its fat but is still pink and the onions are slightly charred in spots but not too dark, 20 to 25 minutes.
  • Meanwhile, bring a large pot of water to a boil. Smash the garlic cloves with the side of your knife and thinly slice them. When the bacon and onions have had their 20 to 25 minutes, remove the sheet pan from the oven and stir in the garlic, red-pepper flakes, herbes de Provence and vermouth. Place the pan back in the oven and continue cooking until the vermouth is almost evaporated, and the bacon and onions look jammy and caramelized but not burnt, 5 to 10 minutes.
  • Cook the pasta according to package instructions. (Don't overcook it, as angel hair can go from bouncy to soggy in seconds). Reserve 1 cup of the cooking liquid. Drain the pasta and return it to the pot.
  • Carefully transfer everything from the pan to the pot with the cooked pasta. Add the parsley and Parmesan to the pasta, and toss until evenly combined, adding some of the reserved cooking liquid if the sauce needs thinning out. Taste, adding more salt and pepper as needed, and serve immediately.
