OLD SPAGHETTI FACTORY BROWNED BUTTER AND MIZITHRA CHEESE RECIPE

Old Spaghetti Factory Browned Butter And Mizithra Cheese Recipe image

Sometimes you just want to enjoy your favorite meals from home, like this copycat recipe of Old Spaghetti Factory's brown butter and mizithra cheese pasta.

Provided by Tara Rylie

Categories     dinner, main course

Time 35m

Number Of Ingredients 5

1 pound angel hair pasta
1 cup salted butter
½ cup mizithra cheese, finely grated and packed
½ cup romano parmesan, finely grated and packed
2-3 tablespoons fresh parsley, finely chopped and divided

Steps:

  • Cook angel hair pasta according to directions on the package. When finished, drain but do not rinse the pasta. Place drained pasta in a large mixing bowl.
  • While pasta is cooking, roughly cube butter and place it in a small saucepan over medium heat. Let the butter melt and begin to bubble. To ensure the butter is cooking evenly, rotate the pan or tilt slightly to swirl the butter around. Do not stir.
  • After a few minutes, bubbles will begin to fade and butter will start to change color. Watch closely at this point as butter browns quickly from here. Brown butter is done when it is dark golden in color and smells nutty. Remove from heat immediately.
  • Pour hot brown butter over the top of the drained pasta. Use tongs to toss the pasta in butter.
  • Add both kinds of grated cheese and one or two tablespoons of parsley. Toss again until pasta is well coated in cheese and herbs.
  • Serve immediately, garnishing with leftover parsley.

BROWN BUTTER SPAGHETTI WITH GREEK (MIZITHRA) CHEESE

Brown Butter Spaghetti With Greek (Mizithra) Cheese image

I remember this as being the de facto side dish, with a salad, to any lamb dish I had growing up, in my Greek grandparents' house. I make it quite often, and have never had a recipe, so beware, the measurements may be a bit off. I sometimes don't add the garlic and oregano, but they do add a nice zing to the dish.

Time 25m

Yield 4 serving(s)

Number Of Ingredients 6

1/2 cup grated mizithra cheese
8 ounces spaghetti
4 tablespoons butter (do not substitute margarine, or to taste)
2 teaspoons minced garlic (optional)
2 teaspoons oregano (optional)
fresh ground black pepper, to taste

Steps:

  • Cook spaghetti until al dente.
  • Drain spaghetti and leave in colander or drainer.
  • Put butter (and garlic and oregano, if using) into hot pan and put it back on the burner, making sure heat is medium to medium-high.
  • Stirring constantly, cook butter until it's a nice, light to medium brown.
  • Remove pan from heat.
  • Quickly return spaghetti to pan, turning to coat the strands with the butter; the spaghetti should glisten with the light coating of butter.
  • At this point, you can add a bit more butter if you like.
  • Once butter coats spaghetti, add cheese and mix well, so that bits of the mizithra are sticking to the spaghetti evenly.
  • Grind a bit of pepper over the dish and mix again.
  • Serve with extra mizithra and pepper.

SPAGHETTI AND BROWNED BUTTER WITH MIZYTHRA CHEESE

Spaghetti and Browned Butter With Mizythra Cheese image

This is a wonderful dish that tastes gourmet and is very filling and rich. I figured out this recipe after eating it at a restaurant. It was surprisingly easy to make! Though, I admit, it is not exactly a heart-smart meal.

Tips:

  • Use high-quality ingredients. Fresh, flavorful ingredients will make a big difference in the final dish.
  • Don't overcrowd the pan when browning the butter. This will cause the butter to steam instead of brown.
  • Be patient when browning the butter. It will take a few minutes for the butter to turn a deep golden brown.
  • Don't overcook the pasta. Al dente pasta is firm to the bite and has a slightly chewy texture.
  • Toss the pasta with the browned butter and mizithra cheese immediately after it is cooked. This will help the cheese melt and coat the pasta.
  • Serve the pasta with additional mizithra cheese, freshly ground black pepper, and a squeeze of lemon juice.

Conclusion:

Spaghetti with browned butter and mizithra cheese is a simple but delicious dish that is perfect for a weeknight meal. The browned butter adds a rich, nutty flavor to the pasta, while the mizithra cheese provides a creamy, tangy counterpoint. This dish is sure to please everyone at the table.
