1/4 cup extra-virgin olive oil
1 teaspoon red pepper flakes
4 to 6 cloves garlic, finely chopped
1 tin flat fillet of anchovies, drained, 6 or 7 fillets
2 tablespoons fresh thyme leaves, 4 or 5 sprigs stripped or 1 1/2 teaspoons dried
1 cup dry white wine
1 cup clam juice or chicken stock
1 can (15 ounces) fancy whole baby clams

Stir in clams and lemon zest. Drain pasta. Add to skillet and toss with sauce 2 to 3 minutes, until pasta is al dente and has absorbed some of the sauce and flavor. Add parsley, pepper and salt, to your taste and serve with bread for mopping up remaining juices.

SPAGHETTI WITH CLAMS

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 10

1 pound dried spaghetti
1/2 cup extra-virgin olive oil
2 shallots, thinly sliced
5 to 7 cloves garlic, finely chopped
2 1/2 pounds Manila clams, scrubbed clean
1/2 cup fresh parsley, chopped
1/2 cup dry white wine
2 tablespoons unsalted butter, diced into small cubes
Sea salt and freshly ground black pepper
1 lemon, zested, for garnish

Steps:

  • In a large pot, bring to a boil 6 quarts of salted water. Add pasta, stirring constantly in the beginning to prevent it from sticking together. Cook until al dente, about 8 minutes.
  • Meanwhile, heat the olive oil in a large saute pan. When almost smoking, add shallots and garlic and saute until soft and translucent, about 3 to 4 minutes, being careful not to burn the garlic. Add the clams and wine. Cover and simmer for 6 to 8 minutes or until most clams have opened.
  • Add 2 tablespoons chopped parsley. Whisk in butter to thicken sauce slightly.
  • Drain pasta in a colander. Do not rinse pasta with water - this will remove the pasta's natural starches. Place pasta into the clam saute pan and mix thoroughly. Check seasoning.
  • Pour pasta into large serving bowl. Zest lemon over the dish, being carefull not to zest the white part of the lemon, which is bitter. Garnish with remaining parsley. Serve immediately.

SPAGHETTI WITH CLAM SAUCE

Spaghetti with Clam Sauce image

Categories     Sauce     Clam     Simmer     Boil

Yield serves 6

Number Of Ingredients 13

1/2 cup extra-virgin olive oil
4 plump garlic cloves, peeled and sliced
1 cup (a 6-ounce jar) marinated artichoke hearts, drained and thinly sliced
1/4 teaspoon peperoncino flakes, or to taste
1/4 teaspoon dried oregano
1/2 cup white wine
Juice of 1 orange, freshly squeezed (about 1/4 cup)
3 dozen littleneck clams, scrubbed, rinsed, and drained
Kosher salt for the pasta cooking water
1 pound spaghetti
2 tablespoons chopped fresh Italian parsley
RECOMMENDED EQUIPMENT
A heavy saucepan, such as an enameled cast-iron Dutch oven, 10 inches wide, 3- to-4-quart capacity, with a cover; a large pot for cooking pasta

Steps:

  • Pour the olive oil into the saucepan, and set it over medium-high heat. Toss in the garlic slices, and heat and stir for a minute or so, until sizzling. Drop in the artichokes, stir, and season with the peperoncino and oregano. When the artichoke slices are sizzling, pour in the wine and orange juice, and heat to a boil.
  • Immediately dump in the clams, shake the pan to spread them evenly over the bottom, and put on the cover. Adjust the heat to keep the liquid at a steady simmer, and cook just until the clamshells open, 5 minutes or so. Remove open clams to a colander set in a bowl; cook any tightly closed clams a bit longer, about 3 minutes. When all the clams are out of the pan and draining, turn off the heat (and discard any shellfish that have not opened at all).
  • Meanwhile, bring a large pot of water to a boil (6 quarts, with a tablespoon of kosher salt).
  • Shake the clams in the colander to collect all their juices in the bowl below, and pour this liquid back into the saucepan. Bring the clam juices to a boil over medium-high heat, and reduce to a thin sauce consistency (turn off the heat before it gets thick). Meanwhile, pluck the cooled clam meat from the shells, and chop it finely.
  • Now cook the spaghetti-if you're in a hurry, it can cook at the same time as you reduce the sauce and shuck and chop the clams. Have the clam cooking sauce barely simmering in the pan, and stir in the chopped clams just before the spaghetti is al dente.
  • Lift the cooked pasta from the pot, let it drain briefly, drop it into the saucepan, and toss well until all the strands are nicely coated with clam sauce. Sprinkle on the chopped parsley, toss again, and serve the pasta right away in warm bowls.

Tips:

  • Fresh Clams: Use the freshest clams possible. Fresh clams should have tightly closed shells and smell like the ocean. If a clam's shell is open, tap it gently. If it closes, it is still alive and can be used.
  • Purging Clams: Before cooking, purge the clams to remove any sand or grit. Place the clams in a large bowl of cold water with 1/4 cup of salt. Let them soak for 30 minutes, then drain and rinse.
  • White Wine: Use a dry white wine for the clam sauce. A good option is Pinot Grigio or Sauvignon Blanc.
  • Garlic and Herbs: Use fresh garlic and herbs for the best flavor. Finely chop the garlic and parsley, and use fresh thyme sprigs.
  • Cooking the Clams: Cook the clams over medium heat until they open. Do not overcook, or they will become tough.
  • Pasta: Use a long, thin pasta for this dish, such as spaghetti or linguine. Cook the pasta according to the package directions.
  • Serving: Serve the spaghetti with white clam sauce immediately, garnished with fresh parsley and a sprinkle of red pepper flakes.
