Provided by Food Network Kitchen

Time 35m

Yield 4 servings

Number Of Ingredients 11

1 pound tomatoes, roughly chopped
1/2 English cucumber, roughly chopped
1/2 large or 1 small red bell pepper, roughly chopped
1 clove garlic, smashed
3 tablespoons extra-virgin olive oil
1 tablespoon sherry vinegar
Kosher salt and freshly ground pepper
2 cups shredded Monterey jack cheese (about 8 ounces)
8 slices sourdough sandwich bread
3 ounces thinly sliced serrano ham
4 tablespoons unsalted butter

Steps:

  • Combine the tomatoes, cucumber, bell pepper, garlic, olive oil, vinegar, 3/4 teaspoon salt and a few grinds of pepper in a blender. Puree on high speed until creamy, 1 to 2 minutes. Refrigerate until ready to serve.
  • Divide half the cheese among 4 bread slices. Evenly top with the ham and remaining cheese and bread slices. Melt 1 tablespoon butter in a large nonstick skillet over medium heat. Add 2 of the sandwiches and cook, pressing with a heavy skillet, until golden brown on the bottom, 3 to 4 minutes. Flip the sandwiches, adding another 1 tablespoon butter to the pan. Cook, pressing with the skillet, until browned on the other side and the cheese is melted, about 3 minutes. Remove to a plate and sprinkle lightly with salt. Wipe out the skillet and repeat with the remaining 2 tablespoons butter and sandwiches.
  • Season the gazpacho with salt and pepper, if necessary. Divide among small bowls. Serve with the sandwiches.

Time 50m

Yield 2 serving(s)

Number Of Ingredients 5

3 tablespoons butter, room temperature
4 slices bread
6 ounces manchego cheese, thinly sliced
4 ounces jamon serrano (or prosciutto)
4 medjool dates, pitted and chopped

Steps:

  • Line a baking sheet with waxed paper.
  • Spread butter on bread slices.
  • Place two slices of bread on baking sheet, buttered side down; top with half of the sliced cheese and ham, dividing evenly; sprinkle with the dates.
  • Top with remaining cheese and the two remaining bread slices; buttered side up. Refrigerate for 30 minutes (or up to 8 hours covered and wrapped in plastic; peeling plastic wrap away before continuing).
  • Heat panini press and cook sandwiches according to manufacturer's directions. (Instead of using a panini press you can heat a heavy skilit on medium high heat; reduce heat to medium low and place sandwiches on skillet; place another skillet on top of sandwiches; place a weight on top of skillet and cook sandwiches until golden brown and cheese melts (3-5 minutes per side).

Tips:

  • Use high-quality bread: A good grilled cheese sandwich starts with good bread. Look for a sturdy bread that will hold up to the cheese and butter without getting soggy.
  • Choose your cheese wisely: The type of cheese you use will have a big impact on the flavor of your sandwich. Use a cheese that melts well and has a good flavor. Some good options include cheddar, mozzarella, Gruyère, and fontina.
  • Don't be afraid to experiment with different fillings: In addition to cheese, you can also add other fillings to your grilled cheese sandwich, such as ham, bacon, avocado, or tomato. Get creative and see what you like best.
  • Butter your bread: This will help the sandwich to brown evenly and prevent it from sticking to the pan.
  • Cook your sandwich over medium heat: This will help the cheese to melt evenly without burning the bread.
  • Flip your sandwich halfway through cooking: This will ensure that both sides of the sandwich are cooked evenly.
  • Let your sandwich rest for a few minutes before slicing: This will allow the cheese to set and the sandwich to hold together better.

Conclusion:

The Spanish grilled cheese sandwich is a delicious and easy-to-make meal that is perfect for any occasion. With its simple ingredients and customizable fillings, this sandwich is sure to please everyone at the table. So next time you're looking for a quick and tasty meal, give the Spanish grilled cheese sandwich a try.
