I came up with this recipe as a great way to make potatoes new and exciting. They come out tender, crispy, and full of flavor.

2 pounds potatoes, cubed
2 tablespoons dried minced onion
2 ½ teaspoons dried parsley
1 ½ teaspoons garlic powder
1 teaspoon seasoned salt
¼ teaspoon fresh-ground black pepper
2 ½ tablespoons olive oil

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place the potatoes, minced onion, parsley, garlic powder, seasoned salt, pepper, and olive oil in a large bowl; toss together until potatoes are evenly coated. Spread potatoes in an even layer on a baking sheet lined with aluminum foil.
  • Bake for 20 minutes in the preheated oven; flip the potatoes and continue to bake until tender, 20 to 25 minutes.

This is my husband's recipe, although everyone in our familiy makes it now. It is taking an average, ordinary, baked potato and bringing uptown. You can certainly change the quantities with ease, but I have included a recipe for just two.

2 large baking potatoes
2 slices sweet onions, approximately 1/4-inch thick
4 slices bacon, not thick
2 tablespoons butter
2 teaspoons seasoning salt & pepper, divided into 1/4 's

Steps:

  • Take 2 pieces of tin foil and lightly spray the tinfoil with buttter flavored cooking spray where the potato will be. Sprinkle that area with a little seasoning salt and pepper. Split the potato in half. Sprinkle both halves with the seasonings. Place one slice onion on the potato and top with the 1 tablespoon butter. Place other half of potato onion. Wrap the bacon around the potato in a criss cross fashion. Holding potato tightly together, roll up in tin foil. Repeat with other potato.
  • Bake approximately 60 minutes or until potatoes are tender and bacon is cooked.
