1/2 cup chopped sweet red pepper
1/2 cup sliced pimiento-stuffed olives
1/2 cup white wine vinegar
1/2 cup canola oil
1/2 cup sugar
2 teaspoons Dijon mustard
1 teaspoon salt

1 teaspoon mustard seed

Steps:

  • Combine cabbage, onion, peppers and olives. In a large saucepan, mix remaining ingredients; bring to a boil. Cook and stir 1 minute. Pour over vegetables, and stir gently. Cover and refrigerate overnight. Mix well before serving.

Tips:

  • Choose the Right Cabbage: Use a firm, dense cabbage, such as green cabbage or red cabbage, for the best texture and flavor.
  • Shred the Cabbage Thinly: This will help the cabbage absorb the dressing better and make the slaw more tender.
  • Use a Variety of Vegetables: Add other vegetables to your slaw, such as carrots, celery, bell peppers, or onions, for extra flavor and crunch.
  • Make the Dressing Ahead of Time: The dressing will have more time to meld flavors if you make it ahead of time and let it chill in the refrigerator for at least 30 minutes.
  • Toss the Slaw Gently: Be careful not to overmix the slaw, or the cabbage will become limp.
  • Chill the Slaw Before Serving: This will help the flavors to meld and the slaw to become more refreshing.

Conclusion:

Overnight slaw is a delicious and easy-to-make side dish that is perfect for summer gatherings. With its tangy dressing and crisp vegetables, it is a refreshing and flavorful addition to any meal. Experiment with different vegetables and dressings to create your own unique slaw recipe.
