6 to 7 pounds tart apples, unpeeled and quartered
3 cups water
3-1/2 cups sugar
1 teaspoon ground cinnamon
1 cinnamon stick (3 inches)

Steps:

  • In a 6- to 8-qt. heavy kettle, bring apples and water to a boil. Reduce heat and simmer until apples are tender. Press cooked apples through a colander or food mill. Discard peels. , Return pureed apples to the kettle. Stir in the remaining ingredients. Simmer, uncovered, stirring frequently, until the consistency is very thick and the color is dark brown, about 8 hours. Freeze in containers.

12 medium Granny Smith or other cooking apples, peeled and cut into fourths
1 1/2 cups packed brown sugar
1/2 cup apple juice
1 tablespoon ground cinnamon
1 tablespoon lemon juice
1 teaspoon ground allspice
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves

Steps:

  • Mix all ingredients in 5- to 6-quart slow cooker.
  • Cover and cook on low heat setting 8 to 10 hours or until apples are very tender.
  • Mash apples with potato masher or large fork.
  • Cook uncovered on low heat setting 1 to 2 hours, stirring occasionally, until mixture is very thick. Cool about 2 hours.

1 (12 fluid ounce) can frozen apple juice concentrate, thawed
½ cup apple cider
4 pounds Macintosh apples - peeled, cored and chopped
¾ cup dark brown sugar
1 cup apple brandy
1 teaspoon ground cinnamon
1 teaspoon ground ginger
¼ teaspoon ground cloves

Steps:

  • In a large saucepan, bring apple juice concentrate, apple cider, and Macintosh apples to a boil. Reduce heat to low. Stirring occasionally, simmer uncovered about 1 hour, until apples are easily mashed.
  • Mix dark brown sugar, apple brandy, cinnamon, ginger, and cloves into the apple mixture. Bring to a boil, reduce heat, and simmer uncovered 2 hours, stirring occasionally, until thickened. Transfer to sealed sterile containers, and cool at least 1 hour before serving.

1/4 cup/60 milliliters plain yogurt
Turbinado sugar, as needed, for finishing

Steps:

  • Heat the oven to 350 degrees, and lightly grease a 9-by-5-inch loaf pan with nonstick cooking spray. In a medium bowl, whisk together the all-purpose flour, whole-wheat flour, baking soda, cinnamon, allspice, nutmeg and salt to combine. Set aside.
  • In a large bowl, whisk the oil, sugar and brown sugar until well combined (you may need to switch to a rubber spatula after a bit). Add the eggs one at a time and whisk well after each addition to incorporate. Whisk in the vanilla extract.

After I read an article in Country EXTRA about a church group in Tennessee that made apple butter, I thought I would share a recipe I've used for many years. This shortcut version only takes about a half hour to make, and it starts with applesauce. I make my own sauce from the Golden Delicious apple tree in my yard. I hope someone who just wants to remember the taste of "homemade" apple butter, but in a small amount, will enjoy it.

2 cups unsweetened applesauce
1/4 to 1/2 cup sugar
1 teaspoon ground cinnamon

The key to this bread is obtaining a dark, rich apple butter - the darker the better for flavor. I used White House Apple Butter which was wonderful and outside of my mom's fresh homemade apple butter it is the best I've tried. I hope you enjoy this recipe as much as my family.

3/4 cup apple butter
2 teaspoons cinnamon
1/2 teaspoon clove
1/2 cup water
1/2 cup canola oil
1 1/4 cups brown sugar
2 large eggs
1 3/4 cups all-purpose flour, sifted
1 teaspoon baking soda
3/4 teaspoon salt

Steps:

  • In a mixing bowl, combine the apple butter, cinnamon and cloves.
