Yield Makes 2 pizzas, to serve 4 to 6 as a main course, or 8 as a starter

Number Of Ingredients 19

Spelt Crust
2 cups whole grain spelt flour (8 ounces)
2 teaspoons baking powder
3/4 teaspoon fine sea salt
1/2 teaspoon sugar
1 cup whole-milk ricotta cheese
1/4 cup whole milk
2 tablespoons linseed oil or extra-virgin olive oil
1 large egg
Coarse cornmeal, if using a pizza peel
Toppings
4 or 5 green onions
1 cup sour cream
1/4 cup drained nonpareil capers
3/4 teaspoon freshly ground black pepper
1 Granny Smith apple, halved, cored, and sliced very thinly
1 fennel bulb, halved lengthwise, cored, and sliced very thinly
4 ounces thinly sliced prosciutto, cut crosswise into 1/2-inch-wide strips
Linseed or extra-virgin olive oil, for brushing

Steps:

  • 1 First, make the dough. To prepare the dough by hand: Whisk together the spelt flour, baking powder, salt, and sugar in a large bowl. Make a well in the center. In a small bowl, combine the ricotta, milk, linseed oil, and the egg and beat with a fork until smooth. Pour the ricotta mixture into the well. Combine with a dough whisk or a fork, stirring from the center and gradually incorporating the flour from the sides until a fairly moist dough comes together. To prepare the dough by food processor: Place the spelt flour, baking powder, salt, and sugar in the bowl and process for about 10 seconds. In a small bowl, combine the ricotta, milk, linseed oil, and the egg and beat with a fork until smooth. Pour the ricotta mixture across the top of the flour mixture and pulse, in 1-second intervals, just until a ball forms, 5 to 10 pulses. The dough will be fairly moist.
  • 2 Transfer the dough to a well-floured work surface. Lightly flour your hands and briefly knead 5 to 7 turns to get a smooth yet slightly tacky dough. Wrap the dough in plastic wrap and let sit at room temperature for 30 to 45 minutes to allow the bran in the flour to soften.
  • 3 Meanwhile, place a baking stone on a rack on the bottom shelf and preheat oven to 425°F. Liberally sprinkle a pizza peel with coarse cornmeal. Finely chop the white and light green parts of the green onions until you have 1/2 cup. Combine them with the sour cream, capers, and 1/4 teaspoon of the pepper in a small bowl. Finely chop the dark green parts as well (about 1/4 cup) and set aside for garnish.
  • 4 Unwrap the dough, transfer to a lightly floured work surface and cut into 2 pieces. Keep 1 piece covered with plastic wrap. Lightly flour your hands and briefly knead the other until smooth, 7 to 10 turns. Using a rolling pin, roll the dough into an elongated pizza, 11 by 8 inches and about 1/4 inch thick. Do this in stages, occasionally turning the dough over and rolling it out further, lightly flouring your work surface and the rolling pin each time. Place the dough on the pizza peel. Spread half of the sour cream topping across, leaving a 1/2-inch border. Cover with half of the apple slices, top with half of the fennel slices, and sprinkle with half of the prosciutto. Brush the border with oil.
  • 5 Slide the dough onto the baking stone and bake until the fennel just starts to brown at the edges and the rim turns golden brown and starts to crisp - it should yield when pressed with a finger - about 15 minutes. Use a large spatula to lift the edges of the pizza so you can slide the peel underneath; carefully transfer the pizza to a wooden board. Sprinkle with half of the reserved green onions and 1/4 teaspoon of the pepper. Cut with a sharp knife and serve at once. Repeat with the second pizza.

SPELT PIZZA DOUGH

Spelt Pizza Dough image

The 'ancient grain' spelt is related to modern wheat, but it's actually an entirely different species. From what I hear, it's easier to digest, higher in protein and fiber, and to me at least, has a much better flavor and texture than other whole-wheat flours. Top with favorite pizza toppings!

Time 2h35m

Yield 4

Number Of Ingredients 6

3 cups sprouted spelt flour, or as needed, divided
1 cup warm water (100 to 105 degrees F/38 to 41 degrees C)
2 teaspoons honey
1 (.25 ounce) package active dry yeast
1 tablespoon extra-virgin olive oil, plus more for drizzling
1 teaspoon kosher salt

Steps:

  • Whisk 1 cup flour, water, honey, and yeast together in a bowl. Let stand until yeast softens and mixture is bubbly, about 20 minutes.
  • Stir remaining flour, olive oil, and salt into yeast mixture. Beat mixture in a bowl with an electric mixer fitted with a dough hook attachment, adding more flour as necessary, until a soft and tacky dough forms, 3 to 4 minutes. Place dough in mixing bowl with a little olive oil, cover bowl with a plate, and let rise until doubled in size, 90 minutes.
  • Punch dough down and transfer to a lightly floured work surface. Divide into 4 balls; cover each and let rest until dough rises slightly, 30 to 45 minutes. Roll into desired shapes and thickness.

Time 1h30m

Yield 2 serving(s)

Number Of Ingredients 16

200 ml warm water
2 tablespoons olive oil
1 tablespoon sugar
1/4 teaspoon sea salt
380 g whole wheat spelt flour
2 1/2 teaspoons instant yeast
1 tablespoon olive oil
1 garlic clove, sliced
240 g canned tomatoes, chopped
1/4 teaspoon sea salt
1/4 teaspoon ground black pepper
2 teaspoons dry oregano
100 g prosciutto, thinly sliced (or smoked ham)
50 g pancetta, thinly sliced
400 g button mushrooms, thinly sliced
150 g gouda cheese, coarsely grated (or mozzarella)

Steps:

  • Place the ingredients for the dough into the breadmaker bread pan according to the manufacturer's directions. Set the PIZZA cycle and press START. After about 5 minutes of kneading, check the consistency of the dough. If it is not in a smooth, round ball, open lid and with machine ON, add water, a tablespoon at the time if too dry; add a tablespoon of flour at the time if too wet.
  • Remove the dough promptly from the breadmaker at the end of the cycle. Knead dough about 10 times on a lightly floured surface. Cover with kitchen towel and let it rise for 30 minutes.
  • Meanwhile, for the pizza sauce sauté garlic in olive oil until golden (it mustn't go dark). Add the tomatoes, bring to a simmer and cook for 5 minutes. Set aside to cool. Use as it is, lumpy, or blend with a stick blender to create a smooth sauce.
  • Take a large cookie sheet and place it on a center rack of a cold oven upside-down. Heat the oven to max. Preheating the pan in this way will allow the pizza crust to become crispy from contact with the hot pan, similar to using a pizza stone.
  • Place the pizza dough onto the floured parchment paper. Roll it into a 12-inch disc. Cover with pizza sauce and sprinkle with dried oregano.
  • Place prosciutto and pancetta slices onto the sauce. Gently slide the parchment and pizza off of the cutting board onto the hot cookie sheet bottom. Bake pizza for about 5 minutes at 250°C (or max).
  • Open the oven and slide the rack with the tray out slightly or take it out of the oven to top the pizza with sliced button mushrooms. Return the pizza to the oven, bake for another 5 minutes at max or until pizza becomes crispy. Remove from the oven.
  • Sprinkle grated cheese on top and place the pizza into turned-off oven for 1 -2 minutes to melt the cheese.
  • Cut into quarters and serve with black or green olives.

Number Of Ingredients 11

2 cups cubed butternut squash (1/2-inch pieces)
1 tablespoon plus 1 teaspoon olive oil, divided
1/4 teaspoon salt, divided
1/4 teaspoon freshly ground black pepper, divided
1 medium red onion, halved and thinly sliced
1/4 cup all-purpose flour
1 ball (16 ounces) store-bought whole-wheat pizza dough, at room temperature
2 cups chopped fresh baby spinach
4 ounces crumbled goat cheese
1/2 teaspoon dried thyme
2 tablespoons cornmeal

Steps:

  • Heat oven to 400°. Heat pizza stone on bottom rack (or use an inverted 11" x 16" cookie sheet, not heated). Toss squash with 1 teaspoon oil, 1/8 teaspoon salt and 1/8 teaspoon pepper. On a baking sheet, cook squash until soft and lightly browned, 25 minutes, stirring halfway through; set aside. In a large skillet over medium-high heat, heat remaining 1 tablespoon oil. Cook onion (season with remaining 1/8 teaspoon salt and 1/8 teaspoon pepper), stirring, until light brown, 10 minutes. Add 2 tablespoons water; cook, stirring, until brown, 5 minutes. Remove from heat. Turn oven up to 450°. Sprinkle flour on a flat surface. Press dough into a 15-inch circle or 10" x 16" rectangle. Top with squash, onion, spinach, cheese and thyme. Time 1h30m

Yield 8 serving(s)

Number Of Ingredients 7

2 1/2-3 cups whole grain or 2 1/2-3 cups unbleached white spelt flour
1 cup warm water
1 tablespoon dry yeast
2 tablespoons olive oil
2 teaspoons dried rosemary
1 teaspoon sea salt
extra olive oil

Steps:

  • Dissolve yeast in warm water. Add 1 1/2 cups flour and mix with large spoon.
  • Add oil, rosemary and salt, mixing well.
  • Mix in the rest of the flour and turn out onto a well-floured surface; knead for 5 minutes. Add more flour until dough is no longer sticky.
  • Rinse and dry the bowl and lubricate with olive oil. Return dough to bowl, turning once to cover in oil.
  • Cover dough with clean kitchen towel and let rise for 1 hour in a warm place in the kitchen.
  • Preheat oven to 425 degrees F and divide dough into two or three pieces, depending upon pan size and crust preference; on flat, floured surface roll out each piece to approximate pan size.
  • Sprinkle each pan with a light dusting of cornmeal and lay dough in the pans. Oil your fingertips and press pizza dough into each pan.
  • Lightly precook the crust before adding sauce and toppings. You want the dough to rise enough in the oven to form bubbles but remove before it begins to brown, less than 5 minutes.
  • Add your own toppings and bake for 15-20 minutes depending on your own toppings.

Tips:

  • Use a combination of spelt flour and all-purpose flour to create a crispy and flavorful pizza crust.
  • Fennel and apple add a unique and delicious sweet and savory flavor to the pizza.
  • Prosciutto provides a salty and smoky flavor that complements the other ingredients.
  • Use a baking stone or pizza stone to achieve a crispy crust.
  • Top the pizza with fresh arugula and shaved Parmesan cheese before serving.

Conclusion:

This spelt crust pizza with fennel, prosciutto, and apples is a delicious and unique twist on the classic pizza. The combination of flavors and textures creates a truly special dish that is perfect for any occasion. Follow the tips above to ensure that your pizza turns out perfect every time.
