ROAST RACK OF LAMB WITH MINT SAUCE

Roast Rack of Lamb with Mint Sauce image

The lamb that we buy today hardly requires a typical English mint sauce (the puckery flavor was originally designed to cut through the stronger taste of mutton), but the combination is by now a traditional and still-welcome one. Buttered carrots and a watercress salad would complement the lamb nicely. Uncork a full-bodied Cabernet Sauvignon or red Bordeaux.

It was served with garlic mashed potatoes or herbed white rice, and we had creme brulee for dessert with raspberries for dessert. ABSOLUTE PERFECTION!

Tips:

  • Choose high-quality lamb: Look for lamb that is a deep red color with a fine texture. Avoid lamb that is pale or has a lot of fat.
  • Prepare the lamb properly: Before cooking, trim the lamb of excess fat and silver skin. Then, score the fat in a diamond pattern to help it render evenly.
  • Use a flavorful spice rub: The spice rub is what gives the lamb its delicious flavor. Be sure to use a blend of spices that you enjoy.
  • Cook the lamb to the desired doneness: Lamb can be cooked to a variety of donenesses, from rare to well-done. The internal temperature of the lamb should be 145 degrees Fahrenheit for rare, 150 degrees Fahrenheit for medium-rare, 155 degrees Fahrenheit for medium, and 160 degrees Fahrenheit for well-done.
  • Let the lamb rest before carving: After cooking, let the lamb rest for 10-15 minutes before carving. This will help the juices redistribute throughout the meat, making it more tender and flavorful.
  • Serve with a flavorful sauce: A flavorful sauce can complement the lamb and make the dish even more enjoyable. Some popular sauces for lamb include mint sauce, tzatziki sauce, and red wine sauce.

Conclusion:

Spice-crusted roast rack of lamb with cilantro mint sauce is a delicious and impressive dish that is perfect for a special occasion. With its tender meat, flavorful spice rub, and refreshing sauce, this dish is sure to please everyone at your table. So next time you're looking for a special dish to make, give this recipe a try. You won't be disappointed!
