Set aside.Combine the butter, 2 tablespoons apple juice, brown sugar, cinnamon stick, peppercorns, and star anise in a medium bowl and blend well. Add the apples and toss to coat all over. Transfer the apple mixture to the prepared baking dish and bake for 30 minutes, or until the apples are tender, stirring occasionally. Remove the dish from the oven and place it on a cooling rack.
