KOREAN GRILLED BEEF LETTUCE WRAPS

Korean Grilled Beef Lettuce Wraps image

This dish is downright addictive. Thinly-sliced strips of beef are marinated in a salty-sweet-spicy marinade then quickly seared on the grill. Then they're rolled up into ssam (Korean-style wraps) by folding a piece of steak or two, some rice, vegetables and herbs inside a crisp, cold lettuce leaf. Be sure to put the meat in the freezer for a bit before slicing the meat; it simplifies a potentially onerous task.

Categories     dinner, steaks and chops, main course

Time 1h

Yield 4 servings

Number Of Ingredients 21

1 1/2 pounds rib-eye or other well-marbled steak
1/4 cup soy sauce
1 1/2 tablespoons unrefined sugar
1/3 cup stout or porter
3-4 garlic cloves, minced
2 scallions, minced
1 teaspoon black pepper
2 teaspoons sesame oil
1 tablespoon honey
1 Asian pear, peeled and grated
cooked sushi rice
large lettuce leaves
scallions, chopped
slivered chiles
fresh herbs, like Thai basil, shiso, mint and cilantro
radishes, thinly sliced
baby carrots, peeled and quartered
Persian cucumbers, thinly sliced and marinated briefly with seasoned rice vinegar
chile flakes
garlic cloves, thinly sliced
sriracha or other chili sauce

Steps:

  • Wrap the steak in plastic and place it in the freezer while you put together the marinade. In a medium bowl, combine the soy sauce, sugar, beer, garlic, scallions, pepper, sesame oil, honey and Asian pear. Take the steak out of the freezer and slice it across the grain into 1/4-inch-thick strips. Stir the steak into the marinade and let it sit for 30 minutes, while you build a very hot fire or preheat a gas grill to its highest setting.
  • When the grill is very hot, sear the steak until nicely caramelized, 2 or 3 minutes on each side. Work in batches to avoid crowding the meat. Serve the beef with condiments and make ssam (Korean-style wraps) by folding a piece of steak or two, some rice, vegetables and herbs inside a lettuce leaf.

SPICY ASIAN LETTUCE WRAPS

Spicy Asian Lettuce Wraps image

Originally a Cooking Light recipe, these wraps are great as a festive appetizer or a simple supper. I've added a few ingredients according to my own taste, and these are a hit every time I make them. Great for a dinner if you're short on time (or trying to beat the heat in the kitchen in the summer). Serve with a simple salad and a spicy dipping sauce! You can also replace the chicken with cubed tofu or cooked pork--I've had good luck with both!

Provided by velorutionista

Categories     One Dish Meal

Time 20m

Yield 24 wraps, 8 serving(s)

Number Of Ingredients 10

5 ounces bean threads, uncooked (aka rice or cellophane or glass noodles)
1/2 cup minced fresh cilantro
1/2 cup low sodium soy sauce
2 tablespoons chili paste with garlic
4 teaspoons dark sesame oil
4 cups chopped chopped roasted boneless skinless chicken
1/2 cup roughly chopped roasted unsalted peanuts (or cashews)
1/4 cup finely shredded raw carrot (optional)
1/4 cup shredded raw cucumber (optional)
24 large boston lettuce leaves (or Romaine)

Steps:

  • Cover bean threads with boiling water. Let stand for 5 minutes or until softened. Drain, and rinse under cool water. Chop noodles.
  • While bean threads soak, combine cilantro, soy sauce, chile paste, and oil in a large bowl, stirring with a whisk. Add noodles, chicken, and nuts to soy sauce mixture; toss well to coat. Stir in carrots and cucumber, if using.
  • Spoon 1/3 to 1/2 cup chicken mixture down center of each lettuce leaf; roll up. Serve immediately.

Tips:

  • Choose the Right Steak: Opt for a tender cut like flank or skirt steak. These cuts are flavorful and cook quickly, making them ideal for stir-frying.
  • Slice the Steak Thin: Thinly slicing the steak ensures even cooking and makes it easier to chew.
  • Marinate the Steak: Marinating the steak in a flavorful mixture of soy sauce, garlic, and ginger adds depth of flavor.
  • Use a Hot Pan: A hot pan is essential for getting a good sear on the steak. Make sure your pan is preheated before adding the steak.
  • Don't Overcook the Steak: Overcooked steak becomes tough and chewy. Cook the steak for just a few minutes per side, or until it reaches your desired doneness.
  • Use Fresh Vegetables: Fresh, crisp vegetables add texture and flavor to the lettuce wraps. Choose vegetables that are in season for the best flavor.
  • Make a Flavorful Sauce: The sauce is a key component of the lettuce wraps. Make sure to use a flavorful combination of ingredients, such as soy sauce, rice vinegar, and sesame oil.

Conclusion:

Spicy Asian Steak Lettuce Wraps are a delicious and easy-to-make meal that is perfect for a weeknight dinner or a party appetizer. The tender steak, crisp vegetables, and flavorful sauce come together to create a dish that is sure to please everyone at the table. With a few simple tips, you can make the best Spicy Asian Steak Lettuce Wraps that are bursting with flavor and perfect for any occasion.
