Here's what you need: water, cornstarch, soy sauce, garlic, brown sugar, white pepper, flank steak, salt, cooking oil, chow mein noodle, onion, broccoli floret, sesame oil, scallion

Provided by Claire Nolan

Categories     Dinner

Yield 4 servings

Number Of Ingredients 14

½ cup water
1 tablespoon cornstarch
¼ cup soy sauce
1 tablespoon garlic, minced
1 tablespoon brown sugar
1 teaspoon white pepper
1 lb flank steak, thinly sliced
salt, to taste
3 tablespoons cooking oil, divided
6 oz chow mein noodle, hong kong style pan fried noodles, par cooked according to package instructions
½ cup onion, sliced
1 cup broccoli floret
2 teaspoons sesame oil
scallion, sliced, for garnish

Steps:

  • In a 2-cup (480 ml) liquid measuring cup, combine the water, cornstarch, soy sauce, garlic, brown sugar, and white pepper.
  • In a medium bowl, season the steak strips with salt. Pour half of the sauce over the meat and set the rest aside for later. Mix the sauce with the steak, cover with plastic wrap, and marinate in the refrigerator for 30 minutes to 1 hour.
  • In a wok or deep skillet over medium-high heat, heat 2 tablespoons of cooking oil, then add the par-cooked noodles. Cook for 1-2 minutes, allowing the noodles to crisp, then flip and cook for another 1-2 minutes. Transfer to a plate and set aside.
  • In the same wok, add 1 tablespoon of cooking oil and the marinated beef. Cook the beef for 3-4 minutes, then flip and cook for another 2 minutes, or until slightly crispy. Remove from the wok and set aside.
  • In the same wok, heat the remaining tablespoon of oil and add onion and broccoli. Season with salt, then stir and cook for 3-4 minutes, or until the onions are translucent.
  • Return the steak to the wok, followed by the crispy noodles and sesame oil. Mix well and pour in the reserved sauce. Toss gently and cook for another 2-3 minutes, or until everything is well-combined. Garnish with sliced scallions.
  • Enjoy!

Time 40m

Yield 4 serving(s)

Number Of Ingredients 19

2 tablespoons dry sherry
1 tablespoon reduced sodium soy sauce
2 teaspoons cornstarch
1 teaspoon sugar
3/4 lb flank steak, frozen 15 minutes, halved lengthwise, and sliced thinly across the grain
1 tablespoon canola oil, divided
1/4 cup green onion, thinly sliced
1 tablespoon garlic clove, minced
1 tablespoon fresh ginger, minced
1/4 lb fresh shiitake mushroom (can use reconstituted dried)
1/2 teaspoon crushed red pepper flakes
6 cups fresh broccoli florets (try not to use frozen)
1/4 cup lower-sodium chicken stock, divided
2 tablespoons oyster sauce
2 tablespoons reduced sodium soy sauce
2 tablespoons dry sherry
2 teaspoons sugar
1 teaspoon cornstarch
1 teaspoon sesame oil

Steps:

  • First prepare the marinade. Combine sherry, soy sauce, cornstarch and sugar in a medium bowl. Add sliced beef; toss gently. Refrigerate 30 minutes.
  • Heat a 12-inch skillet (or wok) over high heat until very hot. Add 1 teaspoon canola oil coating pan. Add about half the beef. Cook, without stirring, 1 minute. Remove beef from pan (it will still be pink in places). Repeat with 1 teaspoon oil and remaining beef. Cover beef loosely and set aside. Add remaining 1 teaspoon oil to pan. Stir fry green onions, garlic, ginger, mushrooms, and red pepper flakes until just fragrant, about 45 seconds. Add broccoli and 1/4 cup broth to pan, cover and steam 5 to 6 minutes.
  • To prepare sauce, combine all ingredients in a small jar; shake well.
  • When broccoli is crisp-tender, return beef and add sauce. Toss gently, cooking until sauce thickens slightly.

Tips:

  • Use a well-seasoned wok: A well-seasoned wok will help to prevent the food from sticking and will also help to create a more flavorful dish.
  • Marinate the beef: Marinating the beef will help to tenderize it and infuse it with flavor.
  • Use a variety of vegetables: This recipe uses broccoli and carrots, but you can also add other vegetables such as bell peppers, snow peas, or baby corn.
  • Cook the noodles according to the package directions: The cooking time for noodles will vary depending on the type of noodles you use.
  • Add the noodles to the wok at the end: This will help to prevent them from becoming overcooked.
  • Serve immediately: Chow mein is best served immediately after it is cooked.

Conclusion:

Spicy beef and broccoli chow mein is a delicious and easy-to-make dish that is perfect for a quick weeknight meal. It is also a great way to use up leftover beef. This recipe is sure to please everyone at your table.
