SPICY ZUCCHINI SOUP

Mild red chili powder and pan-browned garlic give flavor to this simple vegetable soup. Quick to make, it's ideal for a light lunch! For a variation, instead of rice use rice-shaped pasta, such as orzo or semone de melone, or very thin pasta known as fideo. Or, use yellow summer squash instead of zucchini and add cooked pinto beans in place of the rice. Diced tomatoes also make a tasty addition!

Time 30m

Yield 4 serving(s)

Number Of Ingredients 7

2 cups diced zucchini
1 (14 ounce) can beef broth
1 cup chunky salsa (mild, medium, hot -you choose)
1 cup water
cooked meatballs (add as many to taste, frozen work just fine)
1 tablespoon fresh cilantro, chopped
corn chips

Steps:

  • In large saucepan combine the zucchini, beef broth, salsa and water.
  • Bring to a boil.
  • Reduce Heat; simmer; 3 to 5 minutes or until Zucchini is crisp tender.
  • Stir in meatballs and cilantro and heat through.
  • Top with Corn chips if desired.

Tips:

  • Use fresh, high-quality ingredients: Fresh vegetables, flavorful beef broth, and tender beef will make all the difference in the taste of your soup. Look for organic or locally-sourced ingredients whenever possible.
  • Don't skimp on the spices: The spices in this soup are what give it its signature flavor. Be generous with the chili powder, cumin, and cayenne pepper. If you like your soup extra spicy, you can always add more spice to taste.
  • Brown the beef before adding it to the soup: Browning the beef adds depth of flavor and helps to prevent it from becoming tough. Be sure to brown the beef in a hot skillet over medium-high heat.
  • Simmer the soup for at least 30 minutes: This will allow the flavors to meld and develop. The longer you simmer the soup, the better it will taste.
  • Serve the soup with your favorite toppings: Shredded cheese, sour cream, diced avocado, or chopped cilantro are all great options.

Conclusion:

This spicy beef and zucchini soup is a delicious and easy-to-make meal that is perfect for a cold day. With its bold flavors and hearty ingredients, this soup is sure to warm you up from the inside out. So next time you're looking for a quick and satisfying meal, give this soup a try.
