I found this on the Foster's Lager website - sounds tasty and easy to make. You can use any beer, I'm sure, but Australian beer would add a special touch of authenticity to this recipe. Posted for Zaar World Tour 2007.

Here's a gist of the article's top tips, conclusion, and recipe:
Top 8 tips and tricks for making an excellent Beer Cheese:
- Beer selection: Use a beer that complements your desired level of spiciness. Lighter beers like pilsners or lagers will impart a crisp, refreshing finish, while darker beers like stouts or porters will add a richer, more complex depth of flavors.
- Cheese choice: Use a semi-hard cheese that melts well, such as cheddar, Monterey Jack, or gouda. Hard cheeses like Parmesan can be added as a garnish to give the dish a more complex texture.
- Spices: Use a variety of spices to create the desired level of heat. Cayenne, paprika, black or red chili powder, cumin, or chili powder are all great options for adding heat and depth of flavors.
- Vegetables: Adding diced jalapeños, onions, or roasted red peppers can give your beer cheese a boost of fresh flavors and textures. Sautéing the veggies before adding them to the cheese mixture will enhance their flavors.
- Herbs: Adding fresh herbs like chives, parsley, or cilantro at the end of the cooking process will give your cheese spread a refreshing pop of green and a bright, vibrant flavors.
- Sausages: Consider adding crumbled sausages or bacon to your beer cheese. This will give it a more complex, meaty flavors and a satisfying texture.
- Bread or crackers: Serve the cheese spread with various bread options such as a sliced French bread, crackers, or tortilla. This combination of creamy cheese spread and crunchy bread provides a wonderful textural contrast.
- Garnish: Garnish your dish with a sprinkling of paprika, cayenne, chili powder, or crushed red peppers to give it an additional kick of heat and some visual appeal.
