½ cup sour cream
4 cups shredded medium Cheddar cheese
6 ounces beer
1 ½ tablespoons chopped canned jalapeno peppers
¼ teaspoon garlic powder

1 cup lager beer, room temperature and flat
2 tablespoons unsalted butter
2 tablespoons unbleached all-purpose flour
1/3 cup whole milk
1/2 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
2 1/2 cups sharp cheddar cheese, grated and firmly packed
1/8 teaspoon sea salt (to taste)
1/8 teaspoon black pepper (to taste)
1 teaspoon hot sauce (such as Cholula)
