This is my own concotion. It's kind of an elementary recipe, really kind of goofy actually but I absolutely love omelettes and I have been working on this one for a while, adding imgredients and taking them out.

2 large grade a eggs
1 cup milk
salt and pepper (to taste)
3 tablespoons Tabasco jalapeno sauce (or however much you like)
1 cup venison sausage (or whatever you like, but venison sausage is really good like this)
1/2 cup sharp cheddar cheese

Steps:

  • Mix eggs, milk, salt and pepper and tabasco together and whisk into a froth. Go overboard if you want, the fluffier the eggs are the better they seem to taste (IMNSHO).
  • Once eggs are in frying pan and cooking for a minute, add sausage.
  • Right before folding eggs into omelette, add cheese so it doesnt get too melted. Use whatever kind of cheese you like. I usually use sharp cheddar, but you can use a mexican blend or I sometimes use Monterey Jack.
  • Add two pieces of toast and a nice cup of chickory coffee and you've got a pretty good breakfast!

½ (1 pound) loaf white bread, cut into cubes
1 ½ pounds Cheddar cheese, shredded
1 cup cubed cooked ham
8 eggs
2 cups milk
1 pinch salt
1 dash hot pepper sauce, or to taste
¼ cup chopped green onion

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking pan.
  • Place half of the bread cubes on bottom of baking pan. Sprinkle with half of the ham and then half of the cheese; repeat.
  • In a large bowl, beat together eggs, milk, salt, hot sauce and green onions. Pour egg mixture into pan.
  • Place pan on top of a baking sheet with a rim and place in oven. Pour water into baking sheet and bake for 60 minutes, or until eggs have set.

1-1/2 teaspoons chopped red onion

6 eggs
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1 cup cooked ham, diced
1 (10 ounce) can original rotel, drained
8 ounces colby-monterey jack cheese, combination shredded (or your cheese of choice)

Steps:

  • Preheat oven to 400 degrees F.
  • Spray an 8 1/2 x 8 1/2 in baking dish with Pam.
  • Beat the eggs with the salt and pepper until foamy.
  • Mix in the cubed ham, Rotel and cheese and mix well.
  • Bake in the oven for 25-30 minutes or until the eggs are set (every oven is different).

SPICY RO-TEL SAUCE
1/2 pound(s) breakfast sausage (regular), crumbled and fried (use mild if you prefer)
10 ounce(s) can of hot Ro-tel with diced tomatoes with habaneros (undrained for spicy and drained for milder)
15 ounce(s) can of white queso cheese sauce (or nacho cheese)
OMELET
3 large eggs
2 teaspoon(s) milk
- salt and black pepper, to taste
1-2 tablespoon(s) oil
- shredded mild cheddar cheese
EXTRAS
- shredded mild cheddar cheese
- chopped green onion
- ground black pepper

Steps:

  • For Sauce: In a saucepan, fry the sausage until done.
  • Mix in RO-TEL and cheese sauce.
  • Heat until sauce is melted and easy to pour. You can add a little water if it is too thick.
  • For Omelet: Beat with fork or whisk - eggs, milk, salt, and pepper.
  • Cook over medium heat, and using a nonstick 8" skillet, add oil.
  • Add egg mixture.
  • Slightly rotate until it begins to cook.
  • Once it begins to solidify, press eggs down into skillet to evenly cover the entire bottom of skillet. Let it cook a couple of minutes, untouched.
  • When the top is still a little bit runny (it will continue to cook after folded onto a plate), sprinkle some mild cheddar cheese down the middle.
  • Now fold one side (1/3) over to the middle.
  • Begin to slide the unfolded side onto serving plate as you also fold the folded side over again.
  • Top with Ro-tel sauce, mild cheddar cheese, green onions, and ground black pepper.
