You'll need lots of napkins with this finger licking good wings. The glaze is amazing and spicy with the right amount of sweetness.

1/3 c instant mashed potato flakes
2 Tbsp canola oil
1 Tbsp salt
4 lb chicken wings separated at joint and tips cut off and discarded
1/4 c smooth or natural peanut butter
1/4 c spicy jelly i used a hot raspberry jelly but you can use jalapeno jelly or whatever flavor you want
1/4 c rice vinegar
3 Tbsp soy sauce
1 Tbsp toasted sesame oil
2 Tbsp honey
1/2 tsp sambal olek sauce

Steps:

  • 1. Preheat oven 425 degrees. Line a baking sheet with parchment paper or silicone baking mat.
  • 2. Whisk the mashed potato flakes, canola oil, and salt together. Add the wings with hands massage the mixture onto the wings. Place the wings on the baking sheet and bake for 20 minutes. Turn the wings and bake 20 more minutes.
  • 3. Meanwhile mix the remaining ingredients together in a large bowl. Once the wings have baked toss in the peanut butter and jelly mixture and place back in oven pouring any remaining sauce on wings and bake another 5 minutes.

¾ cup chicken stock
½ cup The Heat Is On peanut butter
3 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 tablespoon canola oil
2 pounds chicken breast, skinless boneless
2 cloves garlic, finely minced
2 tablespoons grated ginger
2 carrots, julienned or thinly sliced
1 can (398ml) baby corn, cut into bite-sized pieces
1 cup sugarsnap peas
1 red pepper, thinly sliced
¼ cup thinly sliced green onion
¼ cup chopped peanuts
*1 tablespoon water
*1 tablespoon corn starch

Steps:

  • 1. In a small bowl, combine stock, peanut butter, soy sauce, and rice wine vinegar until smooth. 2. Pour ¾ of the mixture into plastic bag. Add chicken to bag. Marinade for 4 hours or overnight. 3. Add water and cornstarch to small bowl. Stir until smooth. Blend with remaining sauce. Set aside (chilled) while chicken marinades. 4. Grill the chicken. Baste with remaining sauce. 5. In a wok or large heavy-bottomed skillet, heat oil over high heat. Add the remaining ¼ of the peanut butter sauce, garlic and ginger, and cook for about 5 minutes. Add the carrots, baby corn, snap peas and red pepper, and cook for 3-5 minutes longer, or until vegetables are tender-crisp. 6. Serve immediately. Sprinkle green onions and peanuts as garnish.

Tips:

- To make the chicken more flavorful, marinate it in the yogurt mixture for at least 30 minutes before cooking. - If you don't have a tandoor oven, you can cook the chicken in a preheated oven at 450 degrees Fahrenheit for 20-25 minutes or until cooked through. - To make the butter chicken sauce, use a heavy-bottomed pot or pan to prevent sticking. - Add the spices to the butter mixture slowly and stir constantly to prevent burning. - Simmer the sauce for at least 15 minutes to allow the flavors to meld together. - Serve the butter chicken with basmati rice, naan bread, or roti.
