CARIBBEAN CHICKEN PEPPER POT

Caribbean Chicken Pepper Pot image

Provided by Food Network Kitchen

Categories     main-dish

Time 32m

Yield 6 servings

Number Of Ingredients 14

1/4 cup vegetable oil
1 medium onion, halved and sliced
2 bay leaves
1 1/2 tablespoons kosher salt, plus additional for seasoning
2 teaspoons ground allspice
1 heaping teaspoon dried thyme
1/3 cup tomato paste
Freshly ground black pepper
8 skinless, bone-in chicken thighs (about 2 1/2 pounds)
3 1/2 cups water
1 Scotch bonnet chile, pierced (if you like it really hot, mince it)
8 ounces fresh okra, trimmed, halved crosswise
3 thick sweet potatoes (about 2 pounds), each cut into 4 rounds with skin on
1 bunch collard greens (about 1 pound), stems removed, chopped

Steps:

  • Heat a 7-liter pressure cooker over medium heat. Stir in the oil, onion, bay leaves, 1 1/2 tablespoons salt, the allspice, and thyme; cook, uncovered, until soft, about 8 minutes. Increase the heat to high, stir in the tomato paste, and cook, stirring and scraping, until it turns brick red, about 2 minutes.
  • Season the chicken with some salt and black pepper, to taste, and add it to the pot, turning to coat with the tomato and onion. Stir in the water, then add the chile, okra, potatoes, and collard greens in that order. You don't need to stir--the collards will cook down and keep everything moist as the cooker comes up to pressure. Close the pressure cooker lid and bring the pressure up to high (which can take up to 10 minutes), then reduce the heat, if necessary, to maintain an even pressure for 7 minutes.
  • Remove from the heat and press the pressure indicator stem until no more steam comes out. Carefully open the pot. Remove and discard bay leaves. Ladle the stew into bowls and serve.

JICAMA CHICKEN SAUTE

Jicama Chicken Saute image

Jicama, there are 104 recipes using this large, bulbous, root vegetable. The jicama has a thin brown skin and white crunchy flesh. It should be peeled before using. This recipe caught my eye and I have managed to misplace the recipe twice. It sounds very good to me and I have plans on making it within the next couple of days. Recipe in from a Pampered Chef cookbook.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients prepped and measured out. This will help you stay organized and ensure that your stew comes together quickly and easily.
  • Choose the Right Jicama: Look for jicama that is firm and has a smooth, unblemished skin. Avoid jicama that is soft or has any signs of bruising.
  • Cut the Jicama Properly: To prevent the jicama from becoming slimy, cut it into matchsticks or thin slices just before adding it to the stew.
  • Use a Good Quality Chicken Broth: The chicken broth you use will make a big difference in the flavor of your stew. Choose a broth that is flavorful and has a rich chicken taste.
  • Don't Overcook the Chicken: Chicken breast can easily become dry and overcooked. Cook it just until it is cooked through, about 8-10 minutes.
  • Add Vegetables Last: Add the jicama and bell pepper to the stew last, so that they retain their鮮豔色彩 and crisp texture.
  • Season to Taste: Once the stew is finished cooking, season it to taste with salt and pepper. You can also add a squeeze of lime juice or a dollop of sour cream for extra flavor.

Conclusion:

This spicy chicken and jicama stew is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of tender chicken, crisp jicama, and flavorful broth is sure to please everyone at the table. Serve it with rice or tortillas for a complete meal.
