½ cup prepared mustard
1 teaspoon chopped fresh thyme
1 teaspoon dried oregano
1 teaspoon chopped fresh basil leaves
1 ½ pounds salmon fillets
2 teaspoons dried dill, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).

Note: for a quicker recipe nix the thyme, oregano, basil, even garlic. Note: for a better presentation, hold dill until the end and sprinkle over the top rather than mixing into sauce. Note: I've used regular jarred spices rather than fresh and they work just fine.

1 1/2 cups mayonnaise
1/2 cup Dijon mustard
2 teaspoons dill
1 teaspoon thyme

1 lb salmon
2 teaspoons extra-virgin olive oil
2 teaspoons fresh lemon juice
1/4 teaspoon salt
1 pinch fresh ground black pepper
2 garlic cloves, minced
2 teaspoons fresh rosemary leaves, chopped or 1 teaspoon dried, crushed rosemary
rosemary sprig, fresh (optional)
capers (optional)

Steps:

  • Cut the fish into 4 equal-size portions. Combine the olive oil, lemon juice, salt, pepper, garlic, and rosemary in a bowl. Brush the mixture onto the fish.
