1 tablespoon sesame oil (or olive oil)
1 cup onion (white; finely chopped)
2 cloves garlic (finely chopped)
1 tablespoon fresh ginger (finely chopped)
4 cups water (or vegetable broth)
1 cup dried red lentils ( rinsed and picked over )
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
1/4 teaspoon ground cardamom
1/4 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
1 teaspoon salt (or to taste)
2 tablespoons tomato paste
Garnish: dairy-free soy yogurt

Steps:

  • Gather the ingredients.
  • In a 3-quart stockpot or other medium-sized soup pot, heat the sesame oil over medium heat. Once the oil is hot, add the onion, garlic, and ginger. Cook, stirring often, until the chopped onion is translucent, about 6 minutes.

  • Garnish with a dollop of dairy-free soy yogurt if desired. Serve hot and enjoy.

Time 1h30m

Yield 4

Number Of Ingredients 14

1 red bell pepper
½ green bell pepper
3 cups water
1 cup brown lentils
1 tablespoon olive oil
1 carrot, sliced
1 onion, chopped
1 broccoli floret, chopped
2 cups vegetable broth
1 tablespoon crushed red pepper flakes
1 tablespoon ground ginger
1 tablespoon ground black pepper
1 teaspoon dried thyme leaves
1 teaspoon dried rubbed sage

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
  • Cut the peppers in half from top to bottom; remove the stem, seeds, and ribs, then place the peppers cut-side-down onto the prepared baking sheet.
  • Bake in the preheated oven until limp, 30 to 40 minutes. Turn the peppers over halfway through cooking. Once ready, place the peppers into a bowl, and tightly seal with plastic wrap. Allow the peppers to steam as they cool, about 20 minutes. Once cool, remove the skins and discard. Chop the peppers
  • Meanwhile, bring the water and lentils to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the lentils are tender, about 30 minutes. Drain, rinse, and set aside.
  • Heat the olive oil in a large saucepan over medium heat. Stir in the carrot, onion, and broccoli; cook and stir until the onion has softened, about 5 minutes. Pour in some of the vegetable broth, cover, and steam the vegetables until tender. Pour in the remaining vegetable broth and chopped peppers; season with the red pepper flakes, ginger, black pepper, thyme, and sage. Simmer until the flavors come together and the vegetables are very tender, about 20 to 30 minutes. Add water if needed to maintain your desired consistency. Stir in the cooked lentils until hot.
  • If desired, pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot.

SPICY LENTILS

Spicy Lentils image

Cooking time for lentils can vary from 15 minutes to as long as 1 hour, depending on the type and age of the lentils. Red Lentils (which turn yellow when cooked) cook very quickly because they are split and after 15 to 20 minutes they soften to a puree. Brown lentils hold their shape better but can take longer to cook. Serve this soupy stew-like dish in a shallow bowl over brown rice. I got this from Prevention Magazine.

SPICY ROOT VEGETABLE & LENTIL CASSEROLE

Spicy Root Vegetable & Lentil Casserole image

I am collecting recipes for my New Year venture back into a largely vegetarian diet. This looks like something my husband and myself will enjoy so I am sticking it here for safe keeping. I found it in the 2008 copy of the yearly 'Vegetarian Christmas' special put out by BBC Good Food Magazine. You can pick the heat of curry paste or powder that will suit your family.

Provided by Sarah_Jayne

Categories     Stew

Time 35m

Yield 4 serving(s)

Number Of Ingredients 10

2 tablespoons sunflower oil
1 onion, chopped
2 garlic cloves, crushed
1 1/2 lbs potatoes, cut into chunks
4 carrots, thickly sliced
2 parsnips, thickly sliced
2 tablespoons curry paste or 2 tablespoons curry powder
1 3/4 pints vegetable stock
4 ounces red lentils
3/4 cup fresh cilantro, roughly chopped

Steps:

  • Heat the oil in a large pan, then cook the onion and garlic over a medium heat for 3 to 4 minutes until softened.
  • Tip in the potatoes, carrots and parsnips.
  • Turn up the heat, then cook for 6 to 7 minutes, until vegetables are nicely golden.
  • Stir in the curry paste or powder and stock, then bring to a boil.
  • Reduce the heat and add the lentils.
  • Cover with a lid and simmer for 15 to 20 minutes until thickened.
  • Season the casserole , then stir in most of the cilantro.
  • Heat through for another minute.
  • Serve with a spoonful of yogurt, if you wish, and sprinkle over the rest of the coriander.

Tips:

  • Choose the right lentils: Lentils come in a variety of colors and sizes, each with a slightly different flavor and texture. For this recipe, I recommend using brown or green lentils, which hold their shape well and have a slightly nutty flavor.
  • Rinse the lentils thoroughly: This will help to remove any dirt or debris, and it will also help the lentils to cook more evenly.
  • Use a variety of vegetables: This recipe is a great way to use up leftover vegetables, so feel free to add whatever you have on hand. Some good options include carrots, celery, onion, bell pepper, and spinach.
  • Add some heat: If you like spicy food, you can add a pinch of chili powder or cumin to the recipe. You can also add a diced jalapeño pepper for an extra kick.
  • Don't overcook the lentils: Lentils should be cooked until they are tender but still hold their shape. If you overcook them, they will become mushy.

Conclusion:

This spicy lentil and vegetable dish is a delicious and healthy meal that is perfect for a weeknight dinner. It is packed with protein, fiber, and vitamins, and it can be easily customized to your liking. So next time you are looking for a quick and easy meal, give this recipe a try!
