GRILLED SESAME LIME CHICKEN BREASTS

Grilled Sesame Lime Chicken Breasts image

Brining chicken breasts in a soy sauce and fish sauce marinade flecked with lime adds flavor and helps retain moisture while they are on the grill. Chicken breasts do particularly well when pounded into an even thickness and cooked quickly over a hot fire, which chars the exterior but keeps them juicy inside. But if you or anyone in your clan would prefer dark meat to white, this recipe will also work with boneless, skinless thighs, though you might have to add a minute or so to the cooking time. Or use a combination of breasts and thighs. Serve these with a cucumber salad and grilled eggplant in the heart of summer.

Time 1h30m

Yield 4 servings

Number Of Ingredients 11

4 (6-ounce) boneless, skinless chicken breasts
2 tablespoons soy sauce
2 teaspoons Asian-style fish sauce
1 (2-inch) piece ginger, peeled and grated
3 garlic cloves, grated
2 limes, as needed
2 tablespoons peanut oil, more for grill
Sesame oil, as needed
Coarsely chopped cilantro, for garnish
Thinly sliced red or green chilies, seeded, for garnish (optional)

Steps:

  • Place chicken breasts between two sheets of parchment or plastic wrap. Using a mallet or rolling pin, pound each to an even thickness of 1/2 inch. Do not make them any thinner or they could dry out.
  • In a large bowl, whisk together soy sauce, fish sauce, ginger and garlic. Grate in zest of 1 lime and squeeze in its juice. Whisk in peanut oil. Place chicken breasts in bowl and turn breasts well to evenly coat with mixture. Cover and refrigerate for at least 1 hour and up to 4 hours. Remove chicken from fridge while you heat the grill.
  • Light the grill, building a hot fire, or heat your gas grill to high. Once grill is fully heated, brush breasts lightly with peanut oil and place chicken on the grill. Cook until undersides are browned and chicken is about halfway cooked, 3 to 5 minutes. Flip breasts and grill until cooked through, 3 to 5 minutes more.
  • Transfer chicken to a platter. Drizzle with sesame oil; garnish with lime juice and cilantro, and chiles if desired.

SPICY LIME MARINATED GRILLED CHICKEN BREASTS

Spicy Lime Marinated Grilled Chicken Breasts image

This marinade is adapted from a recipe found in Chile Pepper magazine. Although I found it delicious, I did not find it "spicy", so if you are not a fan of spicy food, don't let the name scare you away. Next time I make it, I will probably add some crushed red pepper to the marinade. Prep time includes 1 hour to marinate, but you will probably want to marinate the breasts longer than that.

JUICY GRILLED CHICKEN BREAST WITH CILANTRO AND LIME

Time 2h25m

Number Of Ingredients 7

2 large skinless, boneless chicken breast halves

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Grill chicken on the preheated grill until no longer pink in the center and the juices run clear, 10 to 15 minutes. Baste chicken with marinade as it cooks. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Tips:

  • Use fresh, high-quality ingredients: The fresher the ingredients, the better the marinade and grilled chicken will taste. Look for plump, juicy chicken breasts and limes with bright green skin.
  • Don't over-marinate the chicken: Marinating the chicken for too long can make it tough. 30 minutes to 2 hours is the ideal marinating time.
  • Preheat your grill to medium-high heat: This will help to sear the chicken and prevent it from sticking to the grates.
  • Grill the chicken over direct heat for 5-7 minutes per side: This will give the chicken a nice char and cook it through. Be careful not to overcook the chicken, or it will become dry.
  • Let the chicken rest for 5 minutes before serving: This will help the juices redistribute throughout the chicken and make it more tender.

Conclusion:

This spicy lime marinated grilled chicken is a delicious and easy-to-make dish that is perfect for a summer cookout or weeknight meal. The marinade is flavorful and zesty, and the chicken is grilled to perfection. Serve with your favorite sides, such as grilled vegetables, rice, or salad.
