1 red bell pepper, cut into 1/8-inch-thick slices
1/4 cup fish sauce
2 tablespoons sweet soy sauce
2 tablespoons black soy sauce
1 tablespoon chili paste in soybean oil
1 1/2 cups chopped fresh Thai basil leaves (or regular basil)
1 cup whole fresh mint leaves

However you choose to make it, serve the dish over hot rice or simmered noodles and finish it with a little drizzle of Sichuan chile oil, if you've got it.

1 pound boneless beef shank or stew cuts
2 tablespoons vegetable oil
1/2 red onion, diced
2 scallions, trimmed and sliced
