3/4 cup Fiber Oneā„¢ original bran cereal
1 lb extra-lean (at least 90%) ground beef
1/4 cup shredded Parmesan cheese (1 oz)
3/4 teaspoon Italian seasoning
1/4 teaspoon garlic powder
1 can (8 oz) tomato sauce
1 can (14.5 oz) diced tomatoes with green pepper and onion, undrained
1/8 teaspoon ground red pepper (cayenne)
6 oz uncooked whole wheat angel hair (capellini) pasta
Additional shredded Parmesan cheese, if desired
1 to 2 tablespoons chopped fresh parsley, if desired

Steps:

  • Place cereal in resealable food-storage plastic bag; seal bag and finely crush with rolling pin or meat mallet (or finely crush in food processor).
  • In large bowl, mix crushed cereal, ground beef, 1/4 cup cheese, the Italian seasoning, garlic powder and 1/4 cup of the tomato sauce until well blended. Shape into 16 (1 1/2-inch) meatballs.
  • Spray 12-inch skillet with cooking spray. Cook meatballs in skillet over medium heat 8 to 10 minutes, turning occasionally, until browned. Drain if necessary.

3 1/4 tablespoons minced shallot
3/4 tablespoon chopped garlic
1 tablespoon extra-virgin olive oil
1 pound ground beef
3 1/4 tablespoons heavy cream
1 egg
1 1/2 tablespoons tomato paste
1 tablespoon port wine
1 pinch fresh ground pepper
1 pinch salt
3 1/4 tablespoons Parmesan
2 tablespoons bread crumbs
2 tablespoons butter
3 tablespoons all-purpose flour
2 cups heavy cream
1/4 cup Parmesan
2 tablespoons white truffle oil
6 ounces cooked angel hair pasta
Sea salt and fresh ground pepper
Fresh oregano leaves

Steps:

  • Preheat oven to 350 degrees F.
  • To make meatballs: Saute shallot and garlic in olive oil and let cool. Combine all ingredients together and mix well. Scoop into 1-ounce meatballs and shape by hand. Place on a sheet pan and bake for 6 to 7 minutes. Remove from the oven and let cool. After meatballs have cooled, trim off the top and bottom so that the meatballs lay flat and the pasta piles can rest on top.
  • To make the Angel Hair Piles: Melt the butter in a heavy bottomed saucepan. Add the flour stirring continuously. Cook for 2 to 3 minutes on low heat. Add heavy cream while constantly whisking. Turn off heat once the cream starts to boil and thicken. Whisk in cheese. Gently mix the cream sauce and the truffle oil with the pasta and season with salt and pepper. Using a cocktail fork or fondue fork gather about 10 to 12 strands of pasta and roll into a pile small enough to fit on top of each meatball.
  • Preheat oven to 400 degrees F.
  • To assemble: Place each pile of pasta on a meatball. When completed, cover and heat in the oven for 2 to 3 minutes. Place on a serving tray and garnish with small oregano leaves.

500g Lean Minced Beef
1 egg
1 slice of white bread (crusts removed)
2 tbsp Milk
1 tbsp parsley (fresh chopped or dried)
1 tbs olive oil
500ml Passatta
300ml vegetable stock (400ml if you like alot of sauce)
1 tbsp parsley (fresh chopped or dried)
1 tsp white sugar
Salt & Pepper
Spaghetti (or your choice of pasta)
Grated Parmesan (optional)

Steps:

  • Firstly to make the meatballs.
  • Tear the sliced bread into small pieces, put in a bowl and add the milk until the bread soaked it all.
  • Then squeeze as much milk as possible out of the bread and add it to a medium sized mixing bowl.
  • Add the mince, parsley, chilli flakes, egg and a little salt & pepper to the mixing bowl and thouroughly mix and nead until smooth and even.
  • Get out a plate or tray and start to tear small tabletennis sized amounts from the mixture. Roll in the palms of your hands until smooth and place on the tray.
  • Once all oof the mixture is used, put the tray in the fridge and leave for about 20 mins
  • For the sauce, add the passatta, vegetable stock, parsley, chilli, sugar, salt and pepper and stir. Simmer on a low heat until later.
  • After about 20 mins or once the sauce is made, get the meatballs from the fridge, add a little light olive oil (1-2 tbsp) to a frying pan and cook in batches of about 5 or 6 until browned but not completley cooked through.
  • Once all of the meatballs are browned, Add all of the meatballs back to the pan for a couple of minutes and then add to your sauce and simmer for about 15 minutes.
  • Now make your spaghetti, once this is ready serve with your meatballs and add a little parmesan and parsley to garnish.
