1 small onion (chopped)
1 spicy pepper of your choice
2 red Fresno peppers (chopped)
3 cloves garlic (crushed)
1 tsp spicy red pepper flakes (plus more for serving (for an even spicier version, use fiery ghost pepper flakes))
1 14-oz can diced tomatoes ((for a saucier version, use 2-3 cans, or add tomato sauce))
¾ cup cherry tomatoes
4 oz hot soppressata (chopped)
Salt and pepper to taste
1 lb pasta noodles (I used penne)
Fresh chopped basil (for serving)

Steps:

  • Heat a large pan to medium heat and add the olive oil.
  • Add the onion and peppers. Cook them down for 5 minutes or until soft.
  • Add the garlic and pepper flakes; stir to coat. Cook until fragrant, about a minute. Add the diced tomatoes, cherry tomatoes and hot soppressata. Season with salt and pepper. Stir and reduce the heat to a simmer. Simmer for 15 minutes.
  • While the sauce is cooking, prepare your noodles according to the packaging instructions. Drain, but reserve about a cup (240 mof the pasta water. Stir a half cup (120 mof the pasta water into the sauce to loosen it up. Stir in more pasta water, if needed.
  • Stir in the noodles, then garnish with fresh chopped basil and extra crushed red pepper. Drizzle with extra olive oil and serve.

1 large sweet onion, finely chopped
3 cloves garlic, grated
1 1/2 teaspoons dried oregano

One 32-ounce can crushed seasoned tomatoes
One 16-ounce can seasoned tomato sauce
Kosher salt and freshly ground black pepper
1 pound penne pasta
Grated Parmesan cheese, optional

Steps:

  • Heat the oil in a large saucepan over medium heat. Add the sausage and cook, stirring occasionally, until browned. Transfer to a bowl.

1 1/4 cups heavy cream
1 tablespoon vodka
1/2 teaspoon crushed red pepper flakes
1/2 cup finely grated Parmesan, plus more for serving
12 ounces penne pasta
Torn fresh basil leaves, for garnish
1/3 cup olive oil
6 cloves garlic, minced
Three 26-ounce cartons chopped tomatoes
1 teaspoon Italian seasoning
1 large basil sprig
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter

Steps:

  • Bring a large pot of salted water to a boil.
  • Combine the Marinara, cream, vodka and red pepper flakes in a medium saucepan. Bring to a boil over medium-high heat, then reduce the heat and simmer briskly until slightly thickened, about 10 minutes. Whisk in the Parmesan and take off the heat.

I use "Classico d'Sicilia" pre-prepared sauce as a base for this recipe, using the "Spicy Red Pepper" type (its not all that spicy!) and "working" from there...

2 ounces olive oil
1 medium cooking onion, cut to rings
3 tablespoons grated garlic
1 1/2 lbs hot Italian sausage
1 (14 ounce) jar spaghetti sauce
1 (3 ounce) can tomato paste
1 jalapeno pepper, cored and de-seeded, finely chopped
3 -4 hot cherry peppers, split, de-seeded
1 celery rib, finely chopped
3 ounces asiago cheese, grated

Steps:

  • In a saucepan, heat olive oil, add onions, then garlic and sauté until wilted.
  • Place sausage in oven on broiling pan, and heat at 400°F.
  • Add spaghetti sauce to onion/garlic mixture, then stir in the tomato paste, heating slowly to a low boil, mixing well.
