1/2 pound beef top round steak, cut into thin strips
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
1 medium green pepper, julienned
1/4 cup chopped onion
1 garlic clove, minced
1 teaspoon beef bouillon granules
3/4 cup hot water
1 can (10 ounces) diced tomatoes and green chilies
2 tablespoons cornstarch
1/4 cup cold water
Hot cooked noodles, optional

Steps:

  • Sprinkle beef with salt and pepper. In a large skillet, cook beef in oil until no longer pink; remove and keep warm. In the same skillet, saute green pepper and onion until tender. Add garlic; cook 1 minute longer., Dissolve bouillon in hot water; stir into skillet with tomatoes. Return beef to the pan; bring to a boil. Reduce heat; cover and simmer for 30-35 minutes or until meat is tender., Combine cornstarch and cold water; stir into meat mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with noodles if desired.

Flank Steak:
1 1/2 tablespoons fresh lime juice
1 tablespoon grapeseed oil or olive oil
2 garlic cloves, pressed
1 teaspoon hot chili paste (such as sambal oelek)*
1/2 teaspoon grated peeled fresh ginger
1/2 teaspoon honey
1 1 1/2-pound flank steak
Pepper and watermelon salad:
1/4 cup hot chili sauce (such as sriracha)*
1/4 cup grapeseed oil or olive oil
3 tablespoons seasoned rice vinegar
1 1/4 teaspoons honey
4 large bell peppers, preferably assorted colors, cut into 1/2-inch squares
2 tablespoons minced red jalapeño chiles
2 cups 1/2-inch cubes seedless watermelon

Steps:

  • For steak: Whisk all ingredients except flank steak in 13 x 9 x 2-inch baking dish. Add steak; turn to coat. Cover and let marinate at room temperature 2 hours, turning occasionally. Alternatively, cover and chill at least 4 hours and up to 1 day. Bring to room temperature before grilling.
  • For pepper and watermelon salad:
  • Whisk hot chili sauce, oil, vinegar, and honey in small bowl; season dressing with salt and pepper. Place peppers and chiles in large bowl. Toss with 6 tablespoons dressing. Let marinate 2 hours at room temperature. DO AHEAD: Can be made 8 hours ahead. Cover dressing and salad separately and chill. Bring to room temperature before serving.
  • Prepare barbecue (high heat). Grill steak with some marinade still clinging until cooked to desired doneness, about 4 minutes per side for rare. Transfer to work surface; let rest 10 minutes. Thinly slice steak against grain; transfer to platter. Drizzle with some of remaining dressing from salad.
  • Toss watermelon into pepper salad. Serve flank steak and salad with remaining dressing alongside. * Available in the Asian foods section of many supermarkets and at Asian markets.

1 1/2 lbs round steaks
1/3 cup soy sauce
1 clove garlic, minced
1 teaspoon paprika
1/2 teaspoon ground ginger
1/4 cup oil
1 1/2 cups green peppers or 1 1/2 cups yellow peppers, sliced
1 cup celery, finely sliced
1 cup green onion, sliced
1 tablespoon cornstarch
3/4 cup water
1 cup diced tomato
salt, to taste
pepper, to taste

Steps:

  • Cut beef across grain into thin strips.
  • In a bowl combine soy sauce, garlic, paprika, ginger, and oil.
  • Add the beef to bowl and stir to coat.
  • Cover bowl and let it stand 30 min at room temperature.
  • In the meantime, slice vegetables.
  • In a large wok or frying pan, heat 1 Tbsp oil.
  • Add the beef and cook over med/high heat until browned.
  • Remove meat.
  • Add vegetables (except tomatoes) to the pan.
  • Cook vegetables until tender crisp.
  • Return meat to the pan with the vegetables.
  • Mix cornstarch with water and add to pan.
  • Cook until thickened.
  • Add the tomatoes and heat through.
  • Add salt and pepper to taste.
  • Serve over cooked rice or noodles.

2 cups carrots, sliced diagonal strips
1 -2 green pepper, sliced in strips
1 large yellow onion, sliced
2 -3 garlic cloves, crushed
1/4 cup soy sauce
2 tablespoons korean red pepper flakes (do not sub)
1 tablespoon sugar
1 pinch salt and pepper

Steps:

2 roasted poblano chiles, thinly sliced
2 tablespoons olive oil
1 medium onion, halved and thinly sliced
1 red bell pepper, ribs and seeds removed, thinly sliced
kosher salt
3 garlic cloves, minced
2 plum tomatoes, chopped
1 tablespoon fresh lime juice
1 teaspoon ground dried ancho chile powder
1 1/2 lbs sirloin steaks

Steps:

  • To roast your own poblano peppers: place on an aluminum foil-lined sheet pan 4 inches below a broiler. Turn regularly until blistered and blackened all over, 5 to 10 minutes. Place in a bowl, cover with a kitchen towel, and let cool for 10 minutes. Rub the blackened skin off and remove stems and seeds. Rinse chiles to remove skin and seeds, if necessary.
  • Sauce: In a large skillet, heat 1 tablespoon oil over medium heat. Add onion and red peppers; season with salt. Cook, stirring often, until golden-brown, about 10 minutes. Add garlic; cook until fragrant, about 1 minute. Add tomato, poblano peppers, and 1/2 cup water. Reduce heat; simmer until thickened, about 10 minutes. Remove from heat; add lime juice and season to taste with salt.
  • Meat:Meanwhile, prepare steaks: Rub with remaining tablespoon oil and chile powder; season generously with salt. Heat a charcoal or gas grill to medium-high heat. 1 pound cut-up beef for stir-fry
1 medium bell pepper, cut into 3/4-inch squares
1 medium onion, sliced
1/4 cup hoisin sauce
Hot cooked noodles or rice, if desired

Steps:

  • Heat wok or 12-inch skillet over high heat. Add oil; rotate wok to coat side.
  • Add beef to wok; stir-fry about 2 minutes or until brown. Add bell pepper and onion; stir-fry about 1 minute or until vegetables are crisp-tender. Stir in hoisin sauce; cook and stir about 30 seconds or until hot. Serve with noodles.

I recently saw a chef on TV use Senegalese sauces and marinades, and that inspired me for the spicy sauce I used in the wrap. Sweet, spicy and hot all at the same time, but also refreshing because of the lime and avocado!

1 lb beef skirt steak
2 Tbsp olive oil
2 tsp kosher salt
2 tsp garlic
1 tsp pepper
1 tsp cardamom
1 small red onion, diced
1 roasted red pepper, diced (you can make your own fresh roasted peppers! i used jarred ones to save on time)
1 avocado, diced
1 c red leaf lettuce, shredded
1 c green lettuce, shredded
2-3 flour tortillas
for spicy sauce:
4 Tbsp mayonnaise
1 Tbsp olive oil
2 Tbsp hot sauce (i used franks red hot)
1 Tbsp lime juice
1 tsp honey
2 Tbsp cilantro, finely chopped
1 green onion stalk, finely chopped

Steps:

  • 1. Slice skirt steak into slivers. Place in bowl along with garlic, salt, pepper, cardamom and olive oil. Set aside to marinate at room temp while making the sauce.
  • 2. SPICY SAUCE: Whisk together mayo and hot sauce (I used Frank's Red Hot). Then whisk in olive oil and lime juice. Then whisk in honey, cilantro, green onion, salt and pepper.
  • 3. Set sauce in fridge and turn attention back to meat. If you have time, give steak more time to marinate, for a fuller flavor.
  • 4. Into a hot frying pan, saute the steak for 2 minutes. Add diced roasted red pepper and sautee for another 4-5 minutes, stirring often.
  • 5. Warm tortillas in microwave for 10 seconds.
  • 6. Into warm tortilla, layer steak with peppers, red onion, spicy sauce, avocado and lettuce. Optional: I sprinkled the whole thing with some extra lime juice. Wrap, eat and enjoy!
