SPICY PINEAPPLE FRITTERS
These are savory fritters filled with pineapples, habanaro, chives, garlic, turmeric and are very addictive. Serve as an appetizer, top some grilled meats, seafood or a side to a salad. Diced red pepper mix along the pineapple would be very good in this as well.

PINEAPPLE FRITTERS
Steps:
- Note: batter needs to sit for a day in the refrigerator before cooking Place the flour, sugar, and salt in a medium-sized bowl. Separate the eggs. Make a well in the ingredients and place the egg yolks in the well. Mix, adding the water and, gradually, the milk. Beat the egg whites to stiff peaks and gently fold them into the mixture. Add the lemon zest and the nutmeg, stirring to mix them in. Cover the bowl with a damp clean dish towel and place it in the refrigerator for a day.
- When ready to prepare the fritters, heat the oil to 375 degrees in a heavy Dutch oven or deep fryer. Peel the pineapple, core and cut into 1-inch pieces. With tongs, dip the pieces into the batter and fry them until they are golden brown on each side. Remove the fritters with a slotted spoon and let them drain on absorbent paper. Place them on a serving platter and sprinkle them with both the confectioners' sugar and cinnamon by placing them into a small sieve and shaking it over the fritters. Serve warm

Steps:
- Preheat an oven to 350 degrees F (175 degrees C).
- Pour the melted butter in a 9x13-inch baking dish, then sprinkle the brown sugar all around. Arrange the pineapple rings in a single layer in the baking dish, placing a maraschino cherry in the center of each ring. Set aside.
- Combine the flour, baking soda, ginger, cinnamon, cloves, and salt in a bowl. Beat 1 cup butter and the white sugar with an electric mixer in another bowl until light and fluffy. Beat in the eggs and molasses. Gradually stir the flour mixture into the liquid ingredients, alternating with the hot water and reserved pineapple juice, until just combined. Slowly pour the batter evenly into the prepared pan, being careful not to move the arranged pineapple slices.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool the cake in the pan completely on a wire rack. When the cake is cool, run a paring knife between the cake and the edge of the pan. Cover the cake pan with a plate, and invert it to tip the cake out of the pan and onto the plate.

Tips:
- Use ripe pineapples: Riper pineapples are sweeter and juicier, which will make for more flavorful fritters.
- Drain the pineapple well: Be sure to drain the pineapple thoroughly before adding it to the batter. This will help prevent the fritters from being too soggy.
- Don't overmix the batter: Overmixing the batter will make the fritters tough. Mix just until the ingredients are combined.
- Fry the fritters in hot oil: The oil should be hot enough to sizzle when you drop the batter in. This will help the fritters cook evenly and prevent them from sticking to the pan.
- Don't overcrowd the pan: Don't overcrowd the pan with fritters. This will cause them to cook unevenly and stick together.
- Serve the fritters warm: Spicy pineapple fritters are best served warm. You can serve them with a variety of dipping sauces, such as sweet and sour sauce, honey mustard, or barbecue sauce.
Conclusion:
Spicy pineapple fritters are a delicious and easy-to-make snack or appetizer. They're perfect for parties or potlucks, and they're also a great way to use up leftover pineapple. With a few simple ingredients and a little bit of time, you can make these tasty treats that are sure to please everyone.
