1 (13.5 ounce) can light coconut milk
1 ½ cups chicken broth
½ cup water
2 tablespoons butter
1 tablespoon white sugar
2 ¼ cups jasmine rice
3 tablespoons soy sauce
3 tablespoons hoisin sauce
2 tablespoons chicken broth
2 tablespoons chili oil, divided
1 tablespoon sesame oil
cooking spray
3 eggs, lightly beaten
1 tablespoon olive oil
½ cup chopped yellow onion
½ cup chopped green bell pepper
2 tablespoons minced garlic
1 pound cooked shrimp, chopped
1 (10 ounce) package frozen peas, thawed
1 cup sliced green onions

Steps:

  • Bring coconut milk, 1 1/2 cups chicken broth, water, butter, and sugar to a boil in a large saucepan. Stir in rice. Return to a boil; reduce heat and simmer until liquid has been absorbed and rice is fluffy, about 25 minutes. Remove from heat and let sit for an additional 5 minutes. Remove lid and fluff with a fork. Let cool in the refrigerator at least 2 hours.
  • Whisk together soy sauce, hoisin sauce, 2 tablespoons chicken broth, 1 1/2 tablespoons chili oil, and sesame oil in a small bowl. Set sauce mixture aside.
  • Spray a large non-stick skillet with cooking spray and set over medium heat. Pour in eggs; scramble to desired doneness, 3 to 4 minutes. Transfer to a bowl and set aside.

1 large egg, beaten
1/2 pound peeled, deveined medium shrimp
Kosher salt
1 cup chopped broccoli florets
1 teaspoon minced garlic
1 teaspoon finely grated fresh ginger

1 teaspoon Shaoxing wine or dry sherry
3 cups cold cooked long-grain white rice
1 1/2 teaspoons Asian chili oil, or to taste

Steps:

  • Heat a large nonstick skillet or wok over high heat and then swirl in 1 tablespoon of the oil. When the oil begins to smoke, add the egg and swirl the skillet to make a flat egg pancake that's only half set, about 10 seconds; scoop onto a plate.
  • Add the shrimp to the skillet, season with 1/4 teaspoon salt and stir-fry until just cooked through, about 3 minutes. Transfer to a bowl. Add the remaining 1 tablespoon oil to the skillet, then add the broccoli, garlic, ginger, jalapeno, Shaoxing and 1/4 teaspoon salt and stir-fry until crisp-tender, 2 to 3 minutes.

2 tablespoons Ginger-Garlic Paste, recipe follows
2 teaspoons sambal oelek (Asian chile-garlic sauce)
1/2 cup soy sauce
1 teaspoon cornstarch
3 large eggs
1 teaspoon soy sauce
Peanut oil
3 tablespoons peanut oil
1/2 medium yellow onion, diced
1/4 cup finely diced celery
1 tablespoon Ginger-Garlic Paste, recipe follows
2 tablespoons toasted sesame oil
4 cups cold cooked white rice
1/2 cup frozen peas, thawed
1/2 cup frozen shelled edamame, thawed
1 cup diced fresh pineapple
1 cup bean sprouts
1/4 cup soy sauce
2 tablespoons sambal oelek
3 scallions, chopped
1/2 cup garlic cloves, peeled
1/2 cup fresh ginger, broken into broken pieces
2 tablespoons canola oil

Steps:

  • For the shrimp: In a large bowl, combine the shrimp with the soy sauce, Ginger-Garlic Paste, sambal and cornstarch. Mix well to coat the shrimp. Cover and refrigerate for 15 minutes.
  • For the egg crepes: In a bowl, whisk together the eggs, soy sauce and 1/4 teaspoon water. Set a medium nonstick skillet over medium-low heat and coat it lightly with peanut oil. Pour in half the egg mixture and swirl the pan so the egg coats the bottom. Cook over low heat until firm, then carefully turn with a spatula and finish cooking on the other side, about 45 seconds per side. Transfer the egg crepe to a plate to cool. Repeat with remaining egg mixture. When the crepes are cool enough to handle, stack, roll and slice them into thin julienne strips. Set aside until ready to use.
  • For the fried rice: Set a large wok or large nonstick skillet over high heat and swirl in 1 tablespoon of the peanut oil. Add the marinated shrimp and stir fry until slightly pink, about 2 minutes. Transfer the shrimp to a plate and set aside. Reduce the heat to medium and add the remaining 2 tablespoons peanut oil. Add the onions, celery and Ginger-Garlic Paste and stir fry until softened and fragrant, about 3 minutes. Add the sesame oil and the rice and stir fry until hot and a little crispy, about 2 minutes, breaking up the rice with a wooden spoon as you go. Fold in the peas, edamame, pineapple and bean sprouts and continue to stir fry until the vegetables heated through, about 2 minutes more. Stir in the soy sauce and sambal. Fold in the cooked shrimp and the sliced egg crepe. Transfer to a serving platter and garnish with chopped scallions.

3 cups of white rice
1 can of coconut milk
1 cup chicken stock
1 tbsp curry powder
Salt to taste
1 tsp thyme

1 chicken boullion cube
2 cups of large shrimp
1 large red capsicum pepper
1 onion
2 cups of mixed vegetables
Coconut oil

Steps:

  • Rinse 3 cups of long-grain white rice and set aside for later. Pour coconut milk, 2 tablespoons of coconut oil and chicken broth into a medium-sized pot and stir. Then season the mixture with 1 chicken boullion cube, curry powder, thyme, salt to taste, pepper to taste and stir again. Taste the mixture and adjust the seasoning if necessary. Bring the mixture to a boil then simmer for 5 minutes.
  • Add the rice to the coconut milk mixture and stir. Then leave the rice to cook for 15-20 minutes or until nealry done. Check the rice every 7-10 minutes and add more water if necessary.
  • While the rice cooks prepare the shrimp and veggies. Season shrimp with salt and pepper to taste in a bowl. Then, heat a splash of coconut oil in a pan. Once the oil is hot add the shrimp and cook on both sides for 3-4 minutes. Remove the shrimp from the pan and set aside for later.
  • Next, add more coconut oil to the same pan and once the oil is hot add onions and cook for a few minutes. Next add the mixed veggies, season with salt and pepper to taste and cook for 5-7 minutes. Once the veggies are ready set them aside for later.
  • Add the veggies and shrimp to the pot of rice and stir until well combined. Leave the coconut fried rice to simmer for 2-5 minutes until the rice is soft and fluffy.

1 lb Broccolini
2 lb peeled and deveined large shrimp (raw; 20 to 25 per lb)
2 1/2 tablespoons Sriracha sauce
2 teaspoons cornstarch
1/2 cup reduced-sodium chicken broth

  • Rinse rice in a sieve under cold water, then shake well to drain and transfer to a 1 1/2-to 2-quart heavy saucepan. Add water (1 1/2 cups), sugar, 1 cup coconut milk, and 3/4 teaspoon salt.   • Place all your rice noodles in a deep mixing bowl, trying to snap as few of them as possible as you remove them from the package (always a challenge for us). Bring a good amount of water to boil. Pour the boiling water over the rice noodles until they are completely submerged.
  • Every minute or two, give the noodles a stir to loosen them up. When they are completely limp, give them a taste to see if they're cooked through. The thread-like vermicelli noodles used in spring rolls will cook through in just a few minutes. The flat rice noodles might take upwards of ten minutes depending on thickness. Pay attention and test the noodles frequently because they'll become mushy if they overcook.
  • Once the noodles are tender, drain them and run them under cool water to stop the cooking. Toss them with a bit of sesame oil to keep the noodles from sticking to each other if you're not going to use them right away.
