Categories     Spanish Soups & Stews

Yield 4

Number Of Ingredients 13

500gr of dried pardina lentils
1.5ltr hot water
350g of fresh cooking chorizo sausage
1 large onion, finely chopped
2 garlic cloves, finely chopped
1 leek (white only), washed and finely chopped
1 large carrot, peeled and finely chopped
1 green pepper, finely chopped
1 large beef tomato, peeled and finely chopped
1 bay leaf
1 tsp of Spanish smoked paprika dulce
5 tablespoons of extra virgin olive oil

Steps:

  • In a large pan, heat 4 tablespoons of the oil and gently fry the chopped garlic, onion, carrot, leek, pepper and bay leaf for about 5 minutes or until soft. Add the smoked paprika and chopped tomato and fry for a further 3 minutes.
  • Add the lentils and cover with the hot water. Season the lentils with salt and and simmer with the lid on for about 40 minutes, preventing the liquid from boiling as the lentils will split. Shake the pan now and again to thicken the liquid.
  • Whilst the lentils are cooking, heat the remaining oil in a large frying pan and fry the chorizo sausages for 2 minutes on each side. Drain on to some kitchen paper and add to the lentil stew for the last 10 minutes of cooking.
  • Once the lentils are tender, cover with a lid and allow to rest for 5 minutes before serving in warm soup bowls with some crusty bread and a glass of red txakoli.

SLOW-COOKED SPICY BEEF, TOMATO & CHORIZO STEW

Slow-Cooked Spicy Beef, Tomato & Chorizo Stew image

You will need a slow cooker for this recipe, but its one that I have been doing for a while for the family, its really cheap but fulfilling and always guaranteed to warm those cockles!!

Categories     Stew

Time 8h20m

Yield 10-12 serving(s)

Number Of Ingredients 15

1/4 kg lean ground beef (or any lean mince to suit your budget)
1/4 kg stewing beef (or any stewing cuts of meat to suit your budget)
4 chorizo sausages, chopped into cm slices
1 (28 ounce) can chopped tomatoes, open and pour into a bowl (chopped plum tomatoes are nice, we will need the juice so don't throw it away)
6 carrots, chopped into inch size pieces
1/2 swede, chopped into inch size pieces
2 turnips, chopped into inch size pieces
6 large potatoes, chopped into inch size pieces
1/2 cup lentils (already soaked)
1/2 cup pearl barley (already soaked)
1 cup chickpeas (already soaked)
3 pints water, to cover the ingredients in the pot but leave at least 1 inch from the top of the pot
2 tablespoons Worcestershire sauce
2 tablespoons gravy, granules
1 pinch pepper (to season)

Steps:

  • Make sure you prepare this in the morning and leave it bubbling away for at least 8 hours (make sure you don't leave it unattended and follow the guidelines of your slow-cooker). You can do this even if you don't have a slow-cooker but use a fairly big deep-bottomed saucepan or casserole pot and leave on a low heat setting for at least 3 hours.
  • 1. Prepare all veggies and chop into about inch size pieces or bigger if you like (I prefer big chunks).
  • 2. Prepare the tomatoes as above.
  • 3. Chop the stewing beef into inch size pieces, you don't really want them much bigger as they will go chewy and not soft.
  • 4. Chop the chorizo sausages as above into cm size slices.
  • 5. place all ingredients (except the gravy granules and worcester sauce) into your slow cooker along with the water or vegetable stock and turn on as per guidelines. Leave until it comes to the boil and when it starts to simmer add the gravy granules and worcester sauce. Leave bubbling away for approx 8 hours (3 hours if not using a slow cooker) and then serve. be careful as can be very hot!

Tips:

  • Use good quality chorizo: The chorizo is the star of the show in this dish, so it's important to use a good quality one. Look for a chorizo that is firm and has a deep red color. Spicy Spanish chorizo is typically made with pork, smoked paprika, garlic, and salt. If you can't find spicy Spanish chorizo, you can use Mexican chorizo instead, but it will have a different flavor.
  • Sauté the vegetables: Sautéing the vegetables before adding them to the stew helps to develop their flavor and caramelize them slightly. This gives the stew a richer and more complex flavor.
  • Use a good quality broth: The broth is another important ingredient in this stew, so it's important to use a good quality one. Look for a broth that is flavorful and has a good body. You can use chicken broth, beef broth, or vegetable broth, depending on your preference.
  • Season the stew to taste: Once the stew is finished cooking, taste it and season it with salt and pepper to taste. You may also want to add a pinch of cayenne pepper or paprika for extra spice.
  • Serve the stew with your favorite sides: This stew can be served with a variety of sides, such as rice, potatoes, or bread. It's also great served with a dollop of sour cream or yogurt.

Conclusion:

Spicy Spanish chorizo stew is a delicious and hearty dish that is perfect for a cold winter night. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a comforting and flavorful meal, give this stew a try. You won't be disappointed!
