CREAMY DREAMY SPINACH, ONION, AND BACON DIP

Creamy Dreamy Spinach, Onion, and Bacon Dip image

From my favorite gal of all time!! Dip may made up to 2 days ahead of time, covered and refrigerated. Let stand 20 minutes before baking as directed. (These are Paula's directions, but I had to bake for a few minutes more, as well as place under the broiler for a few minutes to get the top browned). Prep time does not include thawing time for spinach and onions.

CREAM CHEESE, BACON AND SPINACH DIP

Cream Cheese, Bacon and Spinach Dip image

This is always a hit at parties, and is frequently requested by friends and relations. I got it from my mother many years ago. And if, by some weird chance, you have any leftover, it's great on toast in the morning for breakfast. I serve it with plain crackers and/or carrot and celery crudites.

Time 20m

Yield 2 cups

Number Of Ingredients 3

250 g cream cheese, Spreadable
3 -4 slices bacon, rind removed
80 g frozen spinach

Steps:

  • Grill bacon until well-cooked, but not crispy. If you do this on a rack above an oven tray, much of the fat will drip away. The time will vary according to the type of bacon. Cool bacon for a few minutes, then chop into very small pieces.
  • Microwave frozen spinach according to directions on the package. Drain any liquid.
  • In a medium sized bowl, mix all the ingredients together until well-blended, then transfer to a nice serving bowl.
  • Cover with glad wrap and cool in the fridge. If you can prepare this a few hours ahead of time, the flavours will intensify, but it is fine straight away.

SPINACH, ARTICHOKE AND BACON DIP WITH CRISPY PITAS

Spinach, Artichoke and Bacon Dip with Crispy Pitas image

Provided by The Hearty Boys

Categories     appetizer

Time 1h35m

Yield 4 cups

Number Of Ingredients 20

1 tablespoon vegetable oil
1 shallot, minced
3 garlic cloves, minced
1 (10-ounce) package frozen chopped spinach, thawed
1 (6-ounce) jar marinated artichoke hearts, roughly chopped
10 bacon strips, fried until crisp and crumbled
1 teaspoon lemon zest
2 cups sour cream
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
Crispy Pitas, recipe follows
1 tablespoon kosher salt
1 tablespoon dried basil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1/2 teaspoon ground black pepper
1/4 teaspoon celery salt
1/2 cup vegetable oil
8 pitas, cut into 12 wedges each

Steps:

  • Heat the vegetable oil in a small skillet over medium low heat. Add the garlic and shallot and cook, stirring frequently, until the shallot softens and the garlic begins to brown, about 7 minutes. Remove from heat and set aside.
  • Put the spinach in a colander and squeeze out all of the excess water. Transfer to a large mixing bowl and add the artichoke hearts, crumbled bacon, cooked garlic and shallot, lemon zest, sour cream, salt and pepper. Mix well with a rubber spatula, and transfer to a decorative bowl. Allow to sit for 30 minutes before serving so the flavors can blend. Serve with crispy pitas.
  • Preheat the oven to 350 degrees F. Mix all of the herbs and spices in a small bowl. Put the pita wedges into a large mixing bowl and add the spice mix. Drizzle the oil over all and toss well to coat. Put the pitas onto a baking sheet, shake it to even them out and place the pan into the top half of the preheated oven until they are crispy and lightly brown, about 20 minutes. Remove from the oven, let cool 10 minutes and mound around the dip bowl.

Tips:

  • Choose Fresh Spinach: Use fresh, vibrant spinach leaves for the best flavor and texture.
  • Cook the Bacon Until Crispy: Crispy bacon adds a delightful smoky flavor to the dip.
  • Don't Overcook the Spinach: Wilted spinach is fine, but overcooked spinach will lose its vibrant color and flavor.
  • Use High-Quality Cream Cheese: Full-fat cream cheese will give the dip a rich and creamy texture.
  • Season to Taste: Adjust the seasonings according to your preference. You can add more salt, pepper, garlic powder, or onion powder if desired.
  • Serve Warm: Spinach and bacon dip is best served warm, straight out of the oven. You can also make it ahead of time and reheat it before serving.

Conclusion:

Spinach and bacon dip is a delicious and versatile appetizer that is perfect for parties, potlucks, or game day gatherings. It is easy to make and can be tailored to your own taste preferences. With its creamy texture, smoky bacon flavor, and vibrant spinach, this dip is sure to be a hit with everyone who tries it. So next time you're looking for a quick and easy appetizer, give this spinach and bacon dip a try. You won't be disappointed!
