1 10-ounce package frozen chopped spinach, thawed, all excess liquid squeezed out
1/2 cup scallions (finely chopped)
3/4 cup chopped artichokes (from canned, drained and patted dry)
1/3 cup diced red pepper
1 clove garlic (minced)
1 tablespoon fresh dill (chopped)
8 large eggs
4 large egg whites
1/4 cup fat free milk
2 tablespoons grated parmesan cheese
1 1/4 teaspoon kosher salt
1/4 teaspoon ground pepper
1/2 cup crumbled feta cheese

Steps:

  • Preheat the oven to 375°F. Spray a 9 x 13 casserole dish with nonstick spray.
  • In a small bowl combine spinach, scallions, artichoke, red pepper, garlic and dill. Pour into the casserole dish spreading evenly.
  • In another bowl, whisk together the eggs, egg whites, milk, parmesan, salt and pepper. Mix in feta cheese and pour over vegetables.
  • Bake until a knife inserted near the center comes out clean, 32 to 35 minutes.
  • Let stand 8 to 10 minutes before cutting into 8 pieces.

One 10-ounce package frozen spinach
1/4 pound firm feta cheese, coarsely crumbled
2 cloves garlic, pressed
About 20 grinds black pepper
Small dash nutmeg
Flour, for dusting
One 10-by-9.5-inch piece of packaged puff pastry

Steps:

  • Preheat the oven to 375 degrees F.
  • Thaw frozen spinach in microwave according to package directions or by running under warm water. Drain spinach, squeezing the excess liquid from it. In a bowl, mix the spinach, feta, garlic, pepper, and nutmeg together.
  • Flour a clean, dry countertop or other flat working surface. Lay out the puff pasty on the floured surface. Flour the top of the dough. Roll out the puff pastry until it is half as thick (about 1/8-inch) and about 24 by 12 inches. Trim edges to size if necessary. Cut into 3-inch strips crosswise and lengthwise, making 32 (3-inch) squares. Make sure the squares are well floured then stack them in a little pile.
  • Fill a little dish with some room temperature water. Imagine each square you work with is separated in half by a diagonal. Place a couple teaspoons of filling in the top half. Dip a finger into the water and moisten the edges of the top half with water. Fold the bottom half to meet the edges of the top half. Use a fork to seal the edges.
  • Place finished pockets on a nonstick baking sheet and bake about 15 minutes until golden brown and puffy. Serve warm.

1 tablespoon sour cream
1 clove garlic, smashed
1/2 teaspoon grated lemon zest (from 1/2 lemon)
1/4 teaspoon kosher salt
One 10-ounce package frozen spinach, thawed and squeezed dry
1/2 cup marinated artichoke hearts, drained
1/2 cup grated mozzarella
1/4 cup freshly grated Parmesan
1/2 cup mayonnaise
12 slices white bread

Steps:

  • Put a rimmed baking sheet in the oven and preheat to 450 degrees F.
  • Combine the cream cheese, sour cream, garlic, lemon zest, salt, spinach and artichoke hearts in a food processor. Pulse until evenly combined. Add the mozzarella and Parmesan; pulse to combine.
  • Spread 1/4 cup of the mayonnaise over half of the bread slices. Place the slices, mayo-side down, on a second rimmed baking sheet and spread evenly with the spinach filling, all the way to the edges. Top with the other 6 slices of bread. Spread the top slices with the remaining 1/4 cup mayonnaise. Carefully, remove the hot baking sheet from the oven and place it directly on top of the sandwiches. 1 (8-ounce) package cream cheese, softened
1/4 cup mayonnaise
1/2 cup Parmesan cheese, grated
2 cloves garlic, peeled and minced
1 (14-ounce) can artichoke hearts, drained and chopped
1 cup frozen spinach, chopped thawed and drained
2 tubes refrigerated crescent rolls
mozzarella, shredded to taste

Steps:

  • Heat oven to 375°F. Lightly spray two muffin tins with baking spray. Combine the first six ingredients in a large bowl, stirring well; set aside. Roll the crescent roll dough out (one tube at a time) onto a large work surface. Seal all the perforations together so that you're left with one big piece of dough. Using a knife or pizza slicer, cut the dough into 12 roughly even squares (you'll end up with 24 squares total). Press each of the dough squares into the two muffin tins.
