Steps:

  • Preheat oven to 400 degrees. Place puff pastry on a baking sheet that's lined with parchment paper - set aside.

2 1/2 tablespoons extra-virgin olive oil
1 shallot or 1/4 red onion, thinly sliced
1/4 pound sliced Canadian bacon, cut into thin strips
8 cups baby spinach (about 8 ounces)
4 large eggs
1/3 cup shredded extra-sharp cheddar cheese

Steps:

  • Preheat the broiler. Arrange the tomatoes cut-side up on one half of a rimmed baking sheet and season with salt and pepper. Broil the tomatoes until they begin to soften, about 2 minutes. Remove from the broiler. Arrange the English muffins on the other half of the baking sheet and brush with 1 tablespoon olive oil. Set aside.
  • Heat 1 tablespoon olive oil in a large nonstick skillet over medium heat. Add the shallot and cook, stirring, until soft, about 2 minutes. 1 (1 pound) loaf day-old bread, cubed
12 large eggs
2 teaspoons kosher salt

1 pound sliced bacon, cut crosswise into 1/2-inch strips
1 pound fresh spinach, wilted, squeezed dry
12 ounces shredded extra-sharp Cheddar cheese, divided

  • Oil bottom and sides of a 9x13-inch baking dish with about a tablespoon of bacon fat.

3 bunches flat-leaf spinach (about 2 pounds total), thick stems removed, well washed and dried

I highly recommend this for your sandwiches. Later in the year I can use cucumber and tomato from my garden, but for now I'm able to use the spinach that over wintered.

4 slices English cucumbers (medium slice)
