1 tablespoon olive oil
2 cups fresh baby spinach, coarsely chopped
2 garlic cloves, minced
1/2 cup reduced-fat sour cream
3 ounces reduced-fat cream cheese
1/3 cup shredded part-skim mozzarella cheese
3 tablespoons grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon cayenne pepper

Steps:

  • Preheat oven to 400°. Remove stems from mushrooms and set caps aside; discard stems or save for another use. In a small skillet, heat olive oil over medium heat. Add spinach; saute until wilted. 2 cloves garlic, minced

1/3 cup half-and-half
2 tablespoons unsalted butter, melted

  • Preheat the oven to 400 degrees F. Heat the oil in a large nonstick skillet over medium-high heat. ¼ cup olive oil
30 large whole fresh mushrooms, stems removed
1 egg
salt and ground black pepper to taste
1 teaspoon minced garlic
1 (10 ounce) package frozen chopped spinach, thawed and drained

¼ cup shredded Gouda cheese
¼ cup shredded mozzarella cheese
¼ cup dry bread crumbs
