1 (10 ounce) package frozen spinach, thawed and drained
1/2 cup onion, chopped
1 cup swiss cheese, shredded
3 eggs
1 1/2 cups milk
3/4 cup Bisquick baking mix
1 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon ground nutmeg

Steps:

  • Preheat oven to 400°F (205¹C).
  • Lightly grease 10-inch pie plate.
  • Heat 1 inch salted water (1/2 tsp salt to 1 cup water) to boiling.
  • Add spinach, cover and heat to boiling.
  • Cook spinach until almost tender (about 5 minutes).
  • Drain spinach thoroughly.
  • Mix spinach, onion and cheese in pie plate.
  • Beat remaining ingredients in blender on High until smooth (about 15 seconds).
  • Pour into pie plate.
  • Bake at 400°F (205°C) about 30 minutes or until knife inserted in center comes out clean.
  • Cool 5 minutes.
  • Garnish as desired.
  • NOTE: High altitude increase baking time to 35 minutes.

13 ounces chicken breasts (may use left over cooked chicken as well as fresh)
1 1/2 cups shredded swiss cheese
1 chopped onion
1 1/4 cups Bisquick
1 3/4 cups milk
4 eggs
1/2 teaspoon salt
1 (300 g) package frozen spinach, thawed and drained

Steps:

  • Boil enough water to cover chicken breast.
  • Place chicken in water; cover and remove from heat.
  • Let sit for 10 minutes.
  • In greased 13x9 inch baking dish or 2 pie pans, combine spinch, chopped chicken, shredded swiss cheese, and onion.
  • In bowl or blender, mix together Bisquick, milk, eggs, and salt.
  • Pour over chicken mixture.
  • Bake in preheated 350°F oven about 30 minutes or until knife inserted in middle comes out clean.

1 bunch spinach (English trimmed)
1 tablespoon olive oil
4 green onions (thinly sliced)
2 garlic cloves (minced)
1 tablespoon dill (fresh chopped)
100 g feta cheese (crumbled)
1/2 cup tasty cheese (grated or cheddar cheese)
4 eggs
1/2 cup self-raising flour
1 1/2 cups milk
mixed salad green (to serve)

Steps:

  • Preheat oven to 200C (180C fan forced.
  • Lightly grease a 4 cup cpacity, 23cm (base measurement) pie dish and place on a baking tray.
  • Wash spinach and pat dry with paper towel, roughly chop.
  • Heat 1 teaspoon oil in a large deep grying pan over medium heat and add spinach and cook, stirring, for 2 minutes or until wilted and transfer to a plate and cool for 20 minutes.
  • Heat remaining oil in pan over medium heat and add onion, cook for 1 minutes or until softened and then add garlic, cook stirring for 30 seconds or until fragrant and transfer to a bowl.
  • Place spinach in a sieve and using the back of a large spoon, press liequid from spinach.
  • Add spinach, dill, feta and tasty cheese to onion mixture and stir to combine and then spoon over base of prepared dish.
  • Whisk eggs and flour together in a jug (mixture will be a little bit lumpy), gradually add milk, whisking to combine.
  • Pour egg mixture over spinach mixture and bake for 30 to 35 minutes or until risen, lightly browned and set.
  • Cut into wedges and serve with salad.

1 clove garlic, finely chopped
1 Tbsp butter
1 pkg forzen spinach, thawed/drained
4 oz cream cheese
1 c milk
1/2 c bisquick baking mix
3 eggs
1 tsp lemon juice
pepper to taste
1/4 c parmesan cheese, grated
1/8 tsp nutmeg
1/2 c mushrooms, sliced

Steps:

  • 1. preheat oven to 350. spray a 9 inch pie plate with cooking spray. drain spinach very well.
  • 2. cook onions, garlic and mushrooms in butter until onions are translucent. Stir in Spinach.
  • 3. cut cream cheese into small cubes. Layer spinach mixure and cream cheese into pie plate.
  • 4. beat milk, eggs, bisquick, lemon juice and pepper until smooth. Pour over spinach.
  • 5. stir in half of the parmesan cheese. Sprinkle remaining parmesan on top. Then sprinkle nutmeg on.
  • 6. Bake at 350 for 35-40 minutes or until knife inserted comes out clean.
