Two of my favorite things blended together; tastes like pierogis on a pizza. Tasty potatoes are spread on a pizza crust and covered in all the traditional pierogi fixings - bacon, cheese, and green onions. Slice and serve with plain sour cream for dipping.

2 ¼ teaspoons active dry yeast
2 teaspoons white sugar
1 cup warm water
3 cups all-purpose flour
1 teaspoon salt
¼ cup olive oil
6 potatoes, thinly sliced
2 tablespoons olive oil
8 ounces sour cream
2 tablespoons garlic powder
1 (8 ounce) package marbled Colby-Monterey Jack cheese, shredded
1 bunch green onions, chopped
¼ cup bacon bits, or to taste

Steps:

  • Dissolve yeast and sugar in warm water in a small bowl. Let stand until yeast softens and begins to bubble, about 5 minutes.
  • Combine flour and salt together in a large bowl. Pour yeast mixture and 1/4 cup olive oil over flour. Mix and knead until a sticky dough forms, about 5 minutes. Place dough in a large, lightly-oiled bowl and turn to coat. Cover with a towel and let rise in a warm place until doubled in volume, about 1 hour.
  • Place potatoes in a large pot and pour in enough water to cover. Bring to a boil; cook until potatoes are just tender, about 10 minutes. Drain.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat; add potatoes and cook until lightly golden, about 5 minutes.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Whisk sour cream and garlic powder together in a small bowl to make pizza "sauce".
  • Gently pat and stretch pizza dough out to a 12-inch circle on a pizza stone. Spread sauce evenly over dough. Layer potatoes on top to cover dough completely. Sprinkle Cheddar cheese, green onions, and bacon bits on top.
  • Bake pizza in the preheated oven until crust is golden brown, 15 to 20 minutes.

1/2 cup Alfredo sauce
2 medium tomatoes
4 cups chopped fresh spinach

4 sweet onions, sliced
4 tablespoons olive oil
Kosher salt
1 pound store-bought pizza dough, rested at room temperature for 4 hours
4 ounces shredded Monterey Jack cheese
4 ounces grated Parmesan
One 24-ounce container Yukon gold and garlic mashed potatoes, preferably Good & Gather, at room temperature
6 strips cooked bacon, sliced
1/4 teaspoon red chile flakes
1/4 cup Greek yogurt, loosened slightly with water
1 tablespoon minced fresh chives

Steps:

  • In a slow cooker on low, add the onions, 2 tablespoons oil and a pinch of salt. Cook, stirring every hour or so, until deep golden brown, 8 to 10 hours. Cook uncovered for the last hour.
  • Preheat the oven to 400 degrees F.
  • Roll the dough out to fit an 11-by-17-inch baking sheet or a large round pizza pan. Drizzle the remaining 2 tablespoons olive oil over the top and pierce the dough with a fork all over to minimize bubbles. Bake the dough, checking every few minutes to ensure it doesn't burn, until lightly golden in the center, about 15 minutes. Remove from the oven and set aside. (Leave the oven on.)
  • In a medium bowl combine the Monterey Jack and Parmesan. Add half of the cheese mixture to the mashed potatoes.
  • Top the dough in an even layer with the mashed potato mixture. Add the caramelized onions, bacon, chile flakes and the remaining cheese. Bake until the cheese is melted and the edges of the crust are golden, 8 to 10 minutes. Top with a drizzle of the yogurt and sprinkle with the chives.

This Polish spinoff is adapted from the Pillsbury Best of the Bakeoff. I love spinach pierogis and anything shaped like a pizza! I use home grown frozen spinach-the amount you use is up to you. It doesn't wreck the recipe to use more or less. I also make my own crust, but I'm sure a ready made crust would work too.

8 -10 ounces frozen spinach, thawed and squeezed dry
1/2 cup onion, chopped

2 tablespoons butter
1/2 teaspoon garlic salt
1 cup mozzarella cheese, shredded
1 cup cheddar cheese, shredded

Steps:

  • Roll pizza dough out to fit a 14 inch pizza pan or a 9x13 baking pan; press dough into greased pan making it thicker on the sides. Prick the crust all over with a fork.

2 (9 inch) refrigerated pie crusts
2 tablespoons olive oil
1 onion, chopped
1 (16 ounce) bag frozen chopped spinach, thawed and drained
1 (15 ounce) container ricotta cheese
2 cups shredded mozzarella cheese, divided
2 tablespoons grated Parmesan cheese
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Remove pie crust pouches from box; leave at room temperature.
  • Preheat oven to 450 degrees F (230 degrees C).
  • Heat olive oil in a skillet over medium heat. Add onion; cook until translucent, about 3 minutes. Add spinach; cook until all moisture has evaporated, about 2 minutes. Remove from heat and let cool.
  • Combine ricotta cheese, 1 1/2 cups mozzarella cheese, Parmesan cheese, salt, and pepper in a bowl. Add cooled spinach mixture; mix topping well.

1 1/2 cups mashed potatoes

1 cup (4 oz.) shredded mozzarella cheese
1/2 cup (2 oz.) shredded Cheddar cheese
1 small onion, sliced, separated into rings

Steps:

  • Heat oven to 425°F. Grease 13 x 9-inch pan. Unroll dough place in greased pan. Starting at center, press out with hands. Bake at 425°F. for 7 to 9 minutes or until light golden brown.Meanwhile, in large skillet, cook spinach and onion in butter until onion is crisp-tender. Stir in potatoes mix well. 1 dozen frozen potato and onion pierogies
1 (10 ounce) can cream of mushroom soup
5 ounces chopped fresh spinach or 1 box frozen chopped spinach
2 tablespoons chopped onions
1 garlic clove
1/2 teaspoon olive oil
1/4 cup mozzarella cheese
1/4 cup parmesan cheese

Steps:

  • Thaw 1 dozen frozen pierogies in boiling water for 3-5 minutes uncovered. Drain.
  • Preheat oven to 350 degrees.
  • Finely chop onion.
  • Mince garlic.
  • Saute fresh spinach in olive oil. Not neccesary if using frozen spinach, just thaw and squeeze water out of it. Remove from pan.
  • Saute onion add more olive oil if needed.
  • Stir garlic into onion and just heat through.Add soup and warm.
  • Grease 13x9 pan.
  • Drizzle 2 tablespoons of sauce on bottom of dish.
  • Place pierogies in single layer.
  • Put spinach on top of each pierogie.
  • Pour rest of sauce evenly over top of spinach and pierogies.
  • Top with mozzarella and parmesan cheese.
  • Bake at 350 degrees covered for 20 minutes.

Tips:

  • To make the pierogi dough, combine flour, salt, and water in a large bowl. Knead the dough until it is smooth and elastic, about 5 minutes. Cover the dough with plastic wrap and let it rest for at least 30 minutes.
